The best tiramisu recipe I've had. The moment when I finished mixing the egg yolks, sugar, mascarpone, whipped cream and amaretto, I tried a little bit with a spoon. Then I thought, "why bother with the rest of the steps, I can eat the whole bowl of this egg yolk and mascarpone mix all by myself!" But I didn't lose my self-control and manage to complete the whole process. It tasted wonderful and also in my opinion, amaretto works the best.
In Italy, traditional Tiramisu is mostly served in a glass cup or any glass receptacle. In other parts of the world, Tiramisu is served in the form of a "slice of cake", and many Asians think of Tiramisu as some sort of "Italian Cake" (!!). The quality of coffee used is critical. IMO, it shd be a strong, full bodied coffee, and the Amaretto's slight almond scent helps accentuate the coffee's aroma. A light shaving of of high-end Gomimo chocolate also gives a rounder, smoother taste.
For everyone who wants ingredients Serves: 8 Ingredients 350ml cold strong black coffee, preferably espresso 150ml Amaretto liquor 5 eggs, separated 300ml double cream 6 tablespoons caster sugar 500g Mascarpone cheese 36 Savoiardi biscuits Cocoa powder for dusting *If you prefer substitute the coffee and Amaretto with cooled drinking chocolate. Method Pour the coffee into a medium size bowl and stir in 4 tablespoons of Amaretto liquor. Set aside. Have a 20 x 30cm ceramic dish ready and make sure that it’s at least 7cm tall. Set aside. Place the egg whites into a large clean bowl and beat until firm peaks form, set aside. Pour the double cream into a medium size bowl and whip until soft peaks form, set aside. Place the egg yolk and sugar into a large clean bowl and beat for about 5 minutes until thick and pale. Add in the Mascarpone cheese and beat thoroughly. Gently fold in the whipped cream with the remaining Amaretto liquor. Fold the egg whites into the Mascarpone mixture, gently so you will not lose the air bubbles and volume. Set aside. Dip each biscuit into the coffee for just 2 seconds and cover the bottom of the ceramic dish with 18 Savoiardi. (Do not dip the biscuits for longer otherwise they will go soggy and make sure that the sugar coated side of the Savoiardi biscuits are always on top). Spread half of the Mascarpone mixture over the biscuits and then cover with another layer of remaining Savoiardi biscuits dipped into the coffee. Spread the remaining cream on top and make it smooth by using a pallet knife. Cover with cling film and refrigerate for 3 hours. Just before serving (and not before otherwise the cocoa powder will go bitter), remove the cling film and dust with cocoa powder.
I love his Italian accent when he speaks English. My fav cook along with Jamie Oliver, because they are innovative, creative an passionate. Passion is very important when you cook!! Thanks for this amazing tiramisu recipe. Kss from Madrid Spain.
Not right though, raw eggs???? Nonono!!???? Should whisk egg mixture over a Bain Marie for 20 mins.....far superior......like a naked cheesecake is better than a cold one you know?
@@waynesharp7763 Raw eggs are fine in the UK with the red lion stamp on them. If you live elsewhere with low food standards then it might be worth checking.
Please tell me if I can use rum extract in place of the liqueur as I am making this for a church event and I don't wanna use the amaretto although I agree it is the best in tiramisu. Or is there an amaretto extract?
I doubt the recipe has been in his family for over 50 years. Tiramisu' was invented in the 1970's... Probably Zuppa Inglese if anything. I love Gino (D'Accampo) but food history is needed!
Thank you so much!!! Now can you give me the ingredients for atleast 32 servings PLEEEEAAASSSEEE! I'm new at this and I'm so lost! I'm getting ready to entertain 32 guest in a week and your recipe " LOOKS AMAZING!" I found you on your facebook page from here too and I requested the same! Grazie mille!
The little PopUp flag asked "Have you tried this recipe?" Well, I WOULD have if the recipe was actually shown! In fatto, I even went to Gino's website, FaceBook page and 1/2 dozen other websites looking for the EXACT recipe... but nope! WHY post a video without the recipe or at least a link to the site with the recipe???
Stop fussing and fretting about exact recipes. You cook with instinct, use your brain and your intuition . Save your painstaking measurements for baking.

I have no doubt it is very tasty. But essentially it is safe to say,you are just eating sugar. I will give this recipe a try though. Looks simple enough.

Chefs don't give out their secret recipes. Everyone could copy it and sell your dishes. That wouldn't be right.
Then he should have stated in the title or prefaced his video with the warning it was "secret" & I wouldn't have watched it.
Stop fussing and fretting about exact recipes. You cook with instinct, use your brain and your intuition . Save your painstaking measurements for baking.
What is that mixer called and what brand and where did you get it from?
Hello is it okay to use cream cheese if mascarpone not available?
Bravo
i like this guy...
My god that smile...I died and came back alive...lol
Looks lovely but the measurements etc would of made it perfect unless I can't see them.
Mi piacci tanto ..bello :)
Did you use raw eggs without pasteurizing them? Why?
Can you post measurements? This recipe is not on your website... You have a different Tiramisu recipe on you site.
yum
Some recipes ask to whip egg yolks over a bain marie. Does anyone know why is that step important? And does that make the Tiramisu taste any better?
Video added 2 playlist!
i doubt myself with that eggwhites over head part
Once you get stiff peaks it should be fine. It is not gonna drench you.
How many cups of double cream?
There are two dates cited in the literature: 1969 (The Washington Post) and 1982 (Merriam-Webster)
what are the ingredients for this?
Perfect tiramisu
Keep making videos man
Yeah, this is italian accent. Viva l'italia!
so tasty
What if it splits 0:34
Sei biravissimo grazie di tutto
Nice recipe but where is the list of ingredients and a full written recipe? I need them to make it.
In English the Savoiardi are called "Lady Fingers"
true

Why did the chef stir the coffee and amaretto with his finger .?
Why this man is not famous in Italy? Because in Italy there are many 'chef' like him!
I think 150 grams of Mascarpone is too oily. but I followed the recipe to the letter and it came out so well
Please include the ingredient in measurement.
It's me, Mario!

maybe this specific version of it has
How much mascarpone cheese goes in?
Normally for 2egg yolks - in classical Tiramisu ( and in most other recipes I've seen) ----250g of Mascarpone!! :)
Loves his country Italy but stays in the UK?
Baji Scipio Dārayav Aurelius Julian Venizelos Nalwa Yes, Gino is a popular Italian chef in the UK :)
he just rounded up, 50 years sound better than 40 years! lol... xD
I never thought that the tiramisu has raw eggs in it!
I'd cookie it
Ciao Bello ;)
Grazie
Raw egg not cooked?
Nothing wrong with raw eggs if it's good quality eggs, can everyone just stopp freaking out about raw eggs

According to my information, tiramisu was invented at the end of the 17th century, in the honor of the Grand Duke of Tuscany, Granduca Cosimo III dei Medici, but I'might be wrong ;-)
Is his accent real??
Been in his family for over 50 years......funny that......seeing as tiramisu was invented in the late 1960s.

yummy yummy ..☼╹◡╹)
Damn he sexy, has an accent and he knows hows to cook. Talk about a perfect guy
Famous in U.K., Funny guy actually
One choo tree
Yea the recipe for tiramisu has not existed for over 50 years
The biscuit is traditional
amaretto is to sweet put rum
Somehow my egg white without the sugar didn’t form well.
Raw eggs are good for you, just ask "Rocky." :)
Am I crazy or is he not giving any amount for ingredients except 2 egg yolk and 2 table spoons of sugar no idea how much other ingredients should be. Ridiculous!
I bet be he said 15, not 50.
I think the coffee would need sweetening it would be bitter
The cream cheese mixture is very sweet and it melds with the coffee soaked sponge fingers anyway after fridge time.
In italiano oppure capire le dosi
panna? davvero? NO.... amaretto? emmm...
Dont put the cream in...made it twice now second time with half the cream...it just tasted like whipped cream with lady fingers even with half the cream... the shop bought tiramisu tastes a million times better than this recipe imo
