Even as he cuts through the mantle, the brain is still largely intact. A squid has a comparable nervous capacity to a dog, but whether or not the squid is aware or feels pain during the process we're not entirely certain. As for the dancing part, personally i can't tell whether it's still alive at that point. One has to remember that the argument that this is all a postmortem response (as frog legs twitch when sprinkled with salt) is difficult to justify when the other tentacles move, even when not directly in contact with the sauce. It's homologous to pouring salt on a right frog leg and the left moves as well (there could be the argument that it is a collective reflex response from a secondary central nervous system governing tentacles in cephalopods, as it is theorised that cephalopods have a secondary 'brain' only for the tentacles, but this implies the animal has a still largely intact nervous system at this point - hence 'alive'). If you feel bad for the squid, this might help you feel better. It was a quick kill, it still moves only because its fresh, the biochemistry still functions. There are sources of unused energy (ATP) stored in the muscles . The salt in soy sauce activate an action potential, therefore they can still contract until the ATP is used up :)

To all the people complaining about the squid "suffering as it's being eaten alive"...it's not. It's already dead by the time they serve it to you. It's just common science behind the "dancing" nature of the dish. The squid is dead, but still served very fresh, and therefore still has a lot of moisture in its body. Soy sauce is very salty and has a high sodium concentration. Sodium tends to draw out moisture so when you pour the very salty sauce on the moisture filled body, it starts to twitch and "dance" as the soy sauce is drawing the moisture out. Also, the color pigments in the skin can still change and pulse some time after they are dead due to just how complex their body systems are. The same thing can sometimes happen in Cajun cuisine and frog legs. Sometimes when they are preparing frog legs, the removed legs will twitch and kick when salt or something salty is put on them.
I think this is incorrect… it literally comes from sea and ocean which is also very salty…. The silvery shiny part that is saved and later chopped is the liver 3. So the head with the legs still has an active brain that’s probably in a whole lot of shock The brain is located between the eyes of the squid, instant brain death is only achieved by cutting between the eyes or blunt force trauma. I unaware of the brain ever being removed when the guts are. The squid was long dead before it hit the plate. After the chef cut off the two front tentacles, which are not directly connected to the brain and thus the squid felt no pain, or wouldn't for a couple of hours until after it was cut off, he tore out the beak which includes the brain. It was dead before it knew what happened.

To all the people complaining about the squid "suffering as it's being eaten alive"...it's not. It's already dead by the time they serve it to you. It's just common science behind the "dancing" nature of the dish. The squid is dead, but still served very fresh, and therefore still has a lot of moisture in its body. Soy sauce is very salty and has a high sodium concentration. Sodium tends to draw out moisture so when you pour the very salty sauce on the moisture filled body, it starts to twitch and "dance" as the soy sauce is drawing the moisture out. Also, the color pigments in the skin can still change and pulse some time after they are dead due to just how complex their body systems are.
The same thing can sometimes happen in Cajun cuisine and frog legs. Sometimes when they are preparing frog legs, the removed legs will twitch and kick when salt or something salty is put on them.
It's eaten after it's dead. But it's prepared while it's alive.
When it's plated, it's dead. The part where it is standing up and "dancing" while he prepares the rest of it? It's still alive.

I think this is incorrect… it literally comes from sea and ocean which is also very salty…. Ok - some people here can’t seem to tell what is taken out and such
1. After cutting the shell the chef removes the gut, gonad, heart, and liver
2. The silvery shiny part that is saved and later chopped is the liver
3. So the head with the legs still has an active brain that’s probably in a whole lot of shock
The brain is located between the eyes of the squid, instant brain death is only achieved by cutting between the eyes or blunt force trauma. I unaware of the brain ever being removed when the guts are.
I back this up due to the colorization of the cells still active around the cut up squid - meaning there’s still cellular activity
