  • Eggplant Lasagna
    Ingredients::
    3 eggplants peeled and sliced 1/8 inch thick
    2 pounds ground meat seasoned with salt, pepper, garlic, parsley, oregano
    1 large container ricotta cheese seasoned with 3 eggs, salt, pepper, garlic, parsley, oregano
    shredded mozzarella
    Sunday sauce
    seasoned bread crumbs
    milk and egg mixture
    Oil
    Steps:
    fry eggplant lay on paper towels over a pan and salt freshly fried eggplant
    brown meat mixture and set aside
    heat up Sunday sauce
    use aluminum pan, sauce the bottom
    place a layer of eggplant over the sauce
    2 scoops of meat over the sauce
    2 scoops of ricotta cheese
    handful of shredded mozzarella
    repeat for 3 layers
    top with grated parmesan cheese and fresh basil
    bake in 375 degree oven for 35-45 minutes
