I made these with my grandma back in the 70s when I was a kid. The vanilla wafers are definitely smaller because they used to fit perfectly on the bottom of a cupcake pan.
Same! I even went to check a vintage muffin tin to see if the tin diameter used to be smaller. Nope. I have some newer mini muffin tins where the "shrunken" full-size 'Nilla wafers will likely work to cover the bottom. The mini 'Nilla would look cute as topper with the fruit topping, as Tammy did.
Sorry to tell you but it’s not the wafer it is the liner. I’m 77 yrs old and have been using this recipe since the Viet Nam war and there was a liner that is between the cupcake size and the mini muffin liner. It has been a couple of years since I’ve seen them anywhere. Even the grocery stores carried them until 3 years ago. I’m glad she has given us the different ideas to be able to still use this recipe. It’s the best🕊

When I was working we used to have lunch with all the employees it was a bring a dish type and one lady made these every time. Yummy
I think from the video that you are correct, Tammy. Nilla Wafer Cookies are smaller. May I suggest next time use Dewey's Bakery Cookies? They are thin and will cover the cupcake liners. They come in different flavors like lemon, triple ginger, and more. I buy them at my local grocery store in the cookie/cracker aisle. There are 140 calories in a serving of 8 cookies! Thanks for sharing your recipe!

Just found this video Tammy. I made mini cheese cakes and I thought the same thing...those vanilla wafers are much smaller. I wondered if I could crumble them up like you did, but I didn't want to mess up the recipe. After watching you, I now know I can do that! Thanks for sharing!

Whipped cream works great. So does just using pie filling. These are really, really tasty. I’ve made them for 40 years.

Thanks for the video. I made these all the time in years gone by, and you motivated me to make them again. I used one vanilla wafer in a tart pan, like I make pecan tarts in! Fits perfectly.

Try parchment paper liners. They come off cupcakes and muffins real cleanly with nothing left on the papers. I love them. These cheesecakes look so delicious?
I always wipe off my mixer and cord after using.

When they crack, you know they're done. They also fall in some when they cool which is good for the topping 🙂 love these little cakes.

The only Nilla wafer is the one you are using, same thing with the cream cheese, cheesecake of any kind is my second favorite dessert. They look good.
I love your recipe here, almost. I'm guessing to not use the cup cake insert paper and instead spray the muffin pan with that cooking spray that contains flour and insert the mixture directly into the pan. I think this would help the sides to more carmelize and still be easy to remove after cooking? Seems that the cup cake paper is holding too much moisture and preventing a nice thin wall/side caramel color effect. Additionally, i'd steal an idea from one of your recent videos and crumble those wafers (like you did on some of them here), but combine with 1 mashed banana as a binder before inserting into the bottom.

I have made these for years! It’s a great recipe, easy and delicious. The vanilla wafers are smaller now. It I used to be a perfect fit. I just used pied filling on top and a dollop of whipped cream. to finish.

Old time recipe that’s delicious. However, I use ginger snaps instead of vanilla wafers. Awesome and this recipe is adaptable.

@@CiciKinyon it looked like 2 standard blocks to me, which would be 2x 8 Oz, if it’s was 2x 4oz, which would be 8 total, she would have used 1 standard block.. I’m assuming

I'm embarrassed to admit that it's been a while since I've seen your videos, and I was surprised to see you have a new kitchen. I went back and looked at slightly older videos and saw you had a "transition" kitchen between old and new. Are you in the same house, or did you move? If it's the same house, I'm completely disoriented. You did a video walk-through of your house not too long ago; maybe you can do one again?
