Kent is also a published author (#2 best selling cookbook on Amazon around the time it was released and a staple on many recommended list) and has been in a few magazines. He added a few other things to but it was pretty much the same as your queso. I learned how to cook from my dad, he was a school trained chef. So I watched the smoked cheese episode and smoked two big blocks of cheddar cheese. Then I made this recipe with the smoked cheese. The only thing I did differently is I did not use Velveeta cheese. Instead, I made my own base with chicken stock and corn starch. Hands down this is the best queso I have ever had. I really enjoy watching your videos, it has made me use my smoker/grill in ways I never thought I would. My husband thought I was nuts smoking cheese, he said it would melt. He LOVED the queso!

I smoked cheese yesterday, first-time ever done that! Then threw a roast and some chicken in the smoker (never waste good smoke!) and made a beef and a chicken queso today. Oh holy moly is this the best thing ever!

Hey Kent been watching for a while but first time commenting. Just wanna add a tip. If you're wanting the cheese to have that smooth texture where the fats don't separate add a little sodium citrate to that broth(best to boil it to mix well, 1tsp per cup of liquid) before hand. It'll give that cheese the nacho cheese like texture, super smooth and creamy! Its amazing and I'm sure will only add to that goodness. The wife and I have been experimenting the last couple months with smoked queso ourselves and the biggest change was adding the sodium citrate.

The reason he uses the Velveeta is because it contains emulsifiers which will allow the other cheeses to melt into a smooth creamy sauce. The same effect can be done by adding sodium citrate (which you can find online) if you want to make a creamy cheese sauce without using Velveeta.

Finally had the extra money to buy my first at home smoker. Made this with half beer half chicken stock. Game changer. For added bonus we added them to our grits the next morning.
I've made this for years and it's delicious. I just make it with hamburger , Velveeta, and pepperchinies. Very satisfying. Kent brought it to another level . gotta try this recipe

Made this tonight on the pellet grill. Holy crap, this stuff is amazing! Did the roast yesterday, then put it all together for dinner this evening. Wow,wow,👏
This really looks delicious and I am definitely going to try it, however I will have to cut back a bit on the chili's, lol. Also, wanted to let you know that I prepared a London Broil roast, using my ovens broiler. I used your Red River Ranch as the outer rub. I towel dried it, used a bit of Avacado oil and then applied the 'RRR' and popped it into the fridge for a few hours, then out on the counter for about 45 minutes and then into the oven. It turned out DELICIOUS !!!! Your seasoning is wonderful and I will be ordering some more pretty quick. And finally, I have tried about a dozen and a half or so of your recipe's and each one of them turned out delicious as well. I only watch 3 cooking TH-cam channels and yours is my favorite. Keep up the good work.
Culinary doing his job is the same as our “culinary” doing his. Made nine salmon patties. Pushed them to the back of the kitchen counter. Came back an hour later, the yellow lab figured out how to get all nine of them. It was a cold sandwich evening.

A couple of years ago I mailed a big old box of spices, some Wick Fowler and some cornbread mix to my best friend in Wath on Dearne. She said the whole neighborhood enjoyed it and kind of developed a taste for good old western cooking. I just keep picturing those good folks in England, Scotland, the Hebrides and Northern Ireland trying to find them some Queso Fresco and Poblano peppers to make this. For sure, cowboy chuck is catching on all over the UK. Hope that they try it because it's fine stuff! Kent and Shannon, after this horrible Covid19 has a vaccine, I sure hope that you can plan a tour of the UK teaching people how to make your recipes. You won't find nicer people on Earth and they would so love your cooking.

This really looks delicious and I am definitely going to try it, however I will have to cut back a bit on the chili's, lol. Also, wanted to let you know that I prepared a London Broil roast, using my ovens broiler. I used your Red River Ranch as the outer rub. I towel dried it, used a bit of Avacado oil and then applied the 'RRR' and popped it into the fridge for a few hours, then out on the counter for about 45 minutes and then into the oven. It turned out DELICIOUS !!!! Your seasoning is wonderful and I will be ordering some more pretty quick. And finally, I have tried about a dozen and a half or so of your recipe's and each one of them turned out delicious as well. I only watch 3 cooking TH-cam channels and yours is my favorite. Keep up the good work.

Culinary doing his job is the same as our “culinary” doing his. Made nine salmon patties. Pushed them to the back of the kitchen counter. Came back an hour later, the yellow lab figured out how to get all nine of them. It was a cold sandwich evening.

A couple of years ago I mailed a big old box of spices, some Wick Fowler and some cornbread mix to my best friend in Wath on Dearne. She said the whole neighborhood enjoyed it and kind of developed a taste for good old western cooking. I just keep picturing those good folks in England, Scotland, the Hebrides and Northern Ireland trying to find them some Queso Fresco and Poblano peppers to make this. For sure, cowboy chuck is catching on all over the UK. Hope that they try it because it's fine stuff! Kent and Shannon, after this horrible Covid19 has a vaccine, I sure hope that you can plan a tour of the UK teaching people how to make your recipes. You won't find nicer people on Earth and they would so love your cooking.

Kent, Shan. LOVE me some pepper jack, these cheese are so good. I never thought to put some beef in my dip to make a meal out of it and snack night on a Friday after a long weekend. This in itself is GOOOD on a chilly night here in the fall.

Mmmm that looks great! Although it was 100 degrees here today, by Tuesday we're getting snow and high of 34. That dip would be fantastic on a cold snowy day. I gotta make me some!
