protip: instead of broth, use evaporated milk. there are several benefits... 1, it'll cause the cheese to emulsify more thoroughly for a more homogenous and smooth queso. 2, in concert with the meat grease, it'll cause the whole thing to stay fluid at room temperature. that way you don't have to heat it up to pour it on stuff. 3, it somehow brings out more of the cheese flavor. i don't know how, but it really does. and make sure to use evaporated, not condensed. evaporated is just straight milk; condensed is sweetened.
Im from the deep south and your open minded attitude and pure genuine personality is rare i love watching you
"I'm from the deep so..."
Now hold it right there Dixie boah
Not many people like you left in America, Kent. A genuine and engaging personality. Keep it up bud!
hah seriously?
technolgy and internet changed them ... probably
The real trap is believing good people aren’t everywhere. It’s like your playing devils advocate and not even noticing. Leave the big city you’re in and figure shit out
Regular Slime you must live in a big city and rarely go outside
@@goodfellow5390 While it's almost impossible to find a cowboy who can cook with such a loveable personality in the big city, even in smaller cities they aren't many that can stack up to Kent from my personal experience. I grew up in a small town in Oklahoma (Clayton) surrounded by nature and we have plenty of ranchers, farmers, and fisherman. As kind and entertaining as they are, you will be remiss if you think many of them have the same personality as Kent. My grandmother is from WIlmore, Kansas and there's even less people there. Now if you expand the criteria out to just an older southern/country guy then there are plenty of those around. Kent Rollins is special and isn't in the same league as them. You don't get to 1.28 millions subscribers without the engaging personality that Kent has while doing the same thing he does. How many people do you know that travels around with a chuck wagon to cook for others while catering? He's been on plenty of shows such as Throw down with Bobby Flay (who Kent destroyed), Chopped, the news, and so forth. Kent is also a published author (#2 best selling cookbook on Amazon around the time it was released and a staple on many recommended list) and has been in a few magazines. You can't tell me there are many like Kent Rollins. I find it hard to believe there's even a single person remotely close to how Kent is with his level of success and occupation.
@Regular Slime the bad people sit at the top and convince the good people that they too are good. yes Im talking about the rich (top 1%). and no Im not a communist.
Kent's dances make me so happy. Thanks for helping us all through these wild times. God bless!
You are watching the beating heart of America. Sincere, skilled, hard working, entertaining, don’t take themselves too seriously, unashamed of who they are, friendly, fundamentally decent, kind to animals, and not a negative word about people.
Good evening to you and Miss Shan. My late father used to make this every now and then when I was growing up. The Velveeta is definitely a must in a cheese dip. He added a few other things to but it was pretty much the same as your queso. I learned how to cook from my dad, he was a school trained chef. And bbq was a second love for him and he instilled that in me. Your way, really reminds me of my dad. Thank you for your time and content. Keep it up.
Everything I've ever seen cowboy Kent make has been delicious
evaporated milk and corn starch (about 1 TB per pound of cheese) with whole cream will make it creamy and keep it from becoming one glob when its cold;).
Much love you to you Cowboy Kent and Cowgirl Shannon! Your videos brighten up my day!!
And also make me hungry...
With all of the chaos surrounding politics, pandemic, and protest/riots, it is very refreshing to watch Kent and Shannon put on a very pleasing video. Very relaxing and entertaining, and the food just makes my mouth water!! Good job as usual, much success to you.
Thanks for watching
Heard ffbbii=■aaAntifa😮.
There is no better way to start the day..............A cup of coffee with Kent out on the ranch. Its great to see the chuck wagon get out. Beautiful scenery. And as always, we are excited to see a new recipe to try this weekend. God Bless!
Kent thank you for introducing Rotel in my life. It is surprisingly good for canned goods. I’ve been using it every now and then for a few months the flavour is right on point.
It is good stuff, Thanks for watching
Mr. Rollins thank you so much for your videos. I am a Law enforcement officer and I get up each day and look forward to watching you videos. Cooking and grilling is the way I unwind from a stressful day. We tip our hat to you sir.
That would also be delicious with chorizo sausage. I know! I make it that way. Love watching you cook Kent. Keep the videos coming, and god bless you both.
Can you taste the chorizo through all the other ingredients? I agree in principle, but I'd like confirmation
The reason he uses the Velveeta is because it contains emulsifiers which will allow the other cheeses to melt into a smooth creamy sauce. The same effect can be done by adding sodium citrate (which you can find online) if you want to make a creamy cheese sauce without using Velveeta.
Kent you are by far the kindest and most wholesome food TH-camr on this site and I admire your sheer existence every time I watch your videos, have a nice day, evening or afternoon.
Hey Kent... just made this recipe. It was outstanding! Thank you Sir. Enjoy/ learn from ur video’s
Glad you enjoyed it and Thanks for watching
Ken, my husband and I love watching your videos. Your recipes are wonderful. Sadly we lost my husbands mother recently and it’s been hard to be inspiring in the kitchen. But We will continue to watch you videos. Much love to you and those that watch you.
This is brilliant, your dishes are a sensation in Poland. Truly delicious, I am waiting for new recipes 😎👌
Thanks Richard for watching
@shredded guy good idea 😉
you remind me so much of all my great uncles and grandpas...(dont worry im not referring you to as old ) watching your videos and recipes make me smile - thank you so very much to you and shannon for all that you do
Hey Kent been watching for a while but first time commenting. Just wanna add a tip. If you're wanting the cheese to have that smooth texture where the fats don't separate add a little sodium citrate to that broth(best to boil it to mix well, 1tsp per cup of liquid) before hand. It'll give that cheese the nacho cheese like texture, super smooth and creamy! Its amazing and I'm sure will only add to that goodness.
The wife and I have been experimenting the last couple months with smoked queso ourselves and the biggest change was adding the sodium citrate.
I just love to watch your videos and I try out so many of your recipes. It amazes me how many different and amazing ways there are to cook thing. An your ending always makes me smile, just to see ole glory flying high and proud!💯🇺🇲
So I watched the smoked cheese episode and smoked two big blocks of cheddar cheese. Then I made this recipe with the smoked cheese. The only thing I did differently is I did not use Velveeta cheese. Instead, I made my own base with chicken stock and corn starch. Hands down this is the best queso I have ever had. I really enjoy watching your videos, it has made me use my smoker/grill in ways I never thought I would. My husband thought I was nuts smoking cheese, he said it would melt. He LOVED the queso!
Kent is just so darn wholesome.... I love the videos but the end bits always bring me a smile. Thank you, sir!
As always a pleasure to see you Mr. Rollins, it looks delicious!!! God bless you and your, Best regards from Mexico !!!

Thank your for supporting the vets and all the firsts' and american loving people with your great humor and flavorful treats. Wish I knew you in person but thank you for the book I bought :-)

Kent you are absolutely the best! You remind me so much of my dad and his best friend. Keep doing what you're doing and bringing us that campfire goodness!
I had to start watching your videos after or during lunch to avoid getting extra hungry. "Why do you wanna be a party pooper" the answer we all saw on Kent's face LOL. It's always good to watch your videos. Cheers from Chile.
What type of chilies 🌶 do you have in Chile 🇨🇱?
I guess I'll have to smoke some cheese in my off-set smoker, which I love, and give this a try. I already have everything except the alder wood chips. So why not try some of the cheesy goodness.
May GOD bless you and Shannon and may he protect everybody from this horrible virus that is killing people world wide
Nice to see you in the outdoors again !!
Thanks kent and family...from Kentucky to you..thanks neighbor..

@@kyriebailey3 While I was watching TAMALE PIE will go great with it
Now you know your getting up to make this like I did
True I'ma bout to go make this and some refried beans with it and put it on some tostadas
This really looks delicious and I am definitely going to try it, however I will have to cut back a bit on the chili's, lol. Also, wanted to let you know that I prepared a London Broil roast, using my ovens broiler. I used your Red River Ranch as the outer rub. I towel dried it, used a bit of Avacado oil and then applied the 'RRR' and popped it into the fridge for a few hours, then out on the counter for about 45 minutes and then into the oven. It turned out DELICIOUS !!!! Your seasoning is wonderful and I will be ordering some more pretty quick. And finally, I have tried about a dozen and a half or so of your recipe's and each one of them turned out delicious as well. I only watch 3 cooking TH-cam channels and yours is my favorite. Keep up the good work.
So glad you enjoyed Bud and Thanks for watching
I have got to try this!!Take care, stay safe and stay healthy both of you. God bless!!
Watching from the uk I wish we had more of a Wild West cowboy culture..
I think this will be a great filling to use in my quesadilla maker!
My day is always better when you and Shannon post a new video.
You know he's a real deal cowboy cuz he said "yeller" for yellow. This cowboy's legit.
I smoked cheese yesterday, first-time ever done that! Then threw a roast and some chicken in the smoker (never waste good smoke!) and made a beef and a chicken queso today. Oh holy moly is this the best thing ever!
Kent, Shan. LOVE me some pepper jack, these cheese are so good. I never thought to put some beef in my dip to make a meal out of it and snack night on a Friday after a long weekend. This in itself is GOOOD on a chilly night here in the fall.
You’re one hip cowboy mr. Rollins!
Happy to have found your channel, I am binge watching them all.
God bless you and your family.
Greetings from Belgium.
Hope you ship to our little country soon.
I've made this for years and it's delicious. I just make it with hamburger , Velveeta, and pepperchinies. Very satisfying. Kent brought it to another level . gotta try this recipe
Hope you enjoy
I can tell that this is one of those things you know will burn the roof of your mouth, but you don't have the patience to wait for it to cool.

Mmmm that looks great! Although it was 100 degrees here today, by Tuesday we're getting snow and high of 34. That dip would be fantastic on a cold snowy day. I gotta make me some! I think that would be good with a tortilla, over bread like a sloppy joe, or even in savory sopapillas. Thanks and take care.
Thanks for watching Rich and hope you enjoy
OMG, that looks better than any queso or dips I've ever seen or tried in my life. How do you come up with your trade recipes? Were you just born with the talent? I could have never thought of the various ingredients and spices you used. I could almost taste it, was wishing I could!! lol Kent, you are
'THE REAL THING". Kind of like Willie, nobody else can sing like him and nobody else can cook like you - seriously. Have a wonderful weekend and next week, have a very Happy Thanksgiving, you and your wife. God Bless you, we all love you. Linda from Granbury, Tx.

That is my face also when someone asks me a similar question like: " Why don't you just buy macaroni & cheese out of the box?"
Yeah, and then they have the audacity to compare it to fresh Mac and Cheese. xD
For the same reason I don't want to get it from KFC. (Actually, not too much of a difference between the two, in my book.)
Ryan Roberts My daughter went to college in Kansas City & she went to a BBQ place & had mac & cheese with smoked brisket burnt ends & she called me & said, "Oh Mommy!! This is Life Changing!!" LOL (Plug for Q39 in Kansas City!)
@@peggygibbons479 Q39, Jack Stack, and SLAP's BBQ are my absolute favorites. Love from east Independence 💖
@@calvinstulip We went to Joe's in KC too & had to stand in line for 45 mins & I was huffin & complaining and my daughter said, "MOM! This is The City! People sometimes have to wait in line and if you can't behave, you can go wait in the car!" (When the roles reverse. LOL)
HOWDY y'all. It sure was good getting to see y'all smokin more cheese. I really like the idea of smokin cheese and Chili's. Have a wonderful week and stay frosty and safe.
Love watching your four legged tasters!! Looks yummy.
Kent you are litter my the best you just have a way about you you just seem like a great guy... best TH-camr no doubt

Finally had the extra money to buy my first at home smoker. Made this with half beer half chicken stock. Game changer. For added bonus we added them to our grits the next morning.
Kent my good friend & Christian brother, this looks delicious & you're right as this can be a meal. I'd make me some refried beans on the side, & i really like smoked foods. You never mentioned , but i think by the look of the bag that those are on the border brand tortilla chips which is the fave of my wife & i. God bless you, Shannon, our vets, the viewers & the pups & all please stay safe. Amen
