Putting a big motor on a little boat doesn't make any difference unless you change the gear ratio to speed up the prop rotation. Hydroplane boats do 70mph with 50hp motors only because they change the gear ration from 2:1 to 1:1 so if the engine is turning at 6000rpm the propellor is also turning at 6000rpm.

More hp, bigger prop/increased prop pitch, move more water, go faster?
Like airplane props, there are climb props (less pitch I think), and speed props(more pitch, I think).

The motor is far too old to break in lmao. You only break in an engine when it’s new
They put new gaskets and rings inside of it. So yes, you should do a little break in
