What a delicious white fruit cake. Love this recipe Barbara. Folding egg whites always lightens batters up and I use the flour over the fruits, nuts and choc chips also. Really does help. Thank you for showing us this xox
Ooh Ange, nuts and choc chips sound so good to add to this. I'll have to try it that way next time. I'm taking this to Church tomorrow for the Christmas party. I've successfully distributed all the cakes I made this week. Next Friday (20th) is our anniversary and I don't want to see another cake...One week later Jada's 18th birthday. Maybe we'll do another one then. lol
As usual it's always a pleasure watching you in the kitchen; even though I may know some of the recipes, it's always a refresher course without using wa lee bit a dis an wa lee bit a dat (lol) I can use accurate measurement and the flavor is consistent. You are like family, it's homey to watch you at work in the kitchen. I learn something new about the white fruit cake, never knew that orange juice can be used instead of milk. I will try it that way in a couple of days, although I like the rum in it. Thanks again for all your helpful tips. Even my daughter who don't cook purchased your cook book. Hopefully, my grand son the want to be pastry cheff, will find joy in cooking recipes from the old country. Merry Christmas to you and your family and the Belizean community.
