Freezer meals
Taco casserole
* 2 lbs ground turkey
* 3/4 cup chopped onion
* 1 packet gluten free taco seasoning
* 2 cans diced tomatoes with green chilies
* 1/2 cup sour cream
* 4 cups cooked rice (white or brown)
* 2 cups frozen corn
* 2 cans black beans (drained and rinsed)
* 16 oz Mexican Style Cheese if dish
* 4 green onions, chopped
* 1/4 cup water
1. Heat olive oil and brown ground turkey and chopped onions. Drain excess grease and add taco seasoning and water. Let cool.
2. In large mixing bowl, combine diced tomatoes with green chilies, sour cream, rice, corn, black beans and half of the shredded cheese. Mix well.
3. Add turkey mixture and mix well.
4. Spray two 9×13 pans and pour half of the mixture into each pan. Cover with remaining cheese and top with chopped green onions.
Chicken Broccoli Cheese Casserole
* 1 3/4 cups low-sodium chicken stock
* 2 cups instant brown rice if you use white rice or non-instant rice, the cooking time and amount of liquid needed may differ
* 1 pound broccoli florets chopped into bite-sized pieces
* 1 teaspoon extra-virgin olive oil
* 1 pound boneless skinless chicken breasts chopped into bite-size pieces
* 3/4 teaspoon kosher salt divided
* 3/4 teaspoon garlic powder divided
* 1/2 teaspoon black pepper divided
* 2 tablespoons all-purpose flour
* 2 cups milk divided (I used skim)
* 3 tablespoons Dijon mustard
* 1/3 cup nonfat plain Greek yogurt
* 1 1/2 cups reduced-fat shredded cheddar cheese divided
Lactation cookies
1 cup butter (two sticks)
1 cup sugar
1 cup firmly packed light brown sugar
4 tablespoons water
2 eggs
1 teaspoon vanilla
3 cups gluten free flour
1 teaspoon baking soda
1 teaspoon salt
3 cups oats
1 cup chocolate chips
3 tablespoons brewer's yeast (amzn.to/2tmfCFo)

I love seeing new recipes and ideas using different ingredients. And the lactation foods are a major big deal because I'm breastfeeding our little boy he just turned 3 months and his appetite is definitely getting bigger so I'm definitely on the lookout for ideas to increase my supply! Having meals prepared is such a game changer, especially right after you have a baby. Because I know for me the last thing I wanted to do was chop produce or get stuff ready the first couple of weeks after. I also had c sections, so it was mostly because I was in a lot of pain those first couple of weeks but they make things so much easier. I'm a single mom so I'm doing it all myself so being able to pull it out of the freezer and throwing it in the oven made things so much easier. For me I also made sure to buy things that were simple to cook or even just pop in the microwave. Newborns take a lot of your time. Love all these recipes, lasagna is one of my favorites to make as well as egg muffins.

I think I I'll try them myself. Many years ago when I was pregnant I would make batches of lasagna as well as large homemade chicken pot pies and stock the freezer. This was over 30 years ago! The first time I was ever ahead of the trend! Never been early before lol.
