If you are referring to the trains at 9:03, that's Hull Trains, another First Group company which operates a handful of trains per day between London Kings Cross and Hull via the ECML.
The Crossrail trains will be included in the next Trains at Speed video coming out later this year as they weren't around at the time that this video was filmed :)

That is Upton Park in London. There are two operational London Underground platforms to the left of the camera (out of sight), but the mainline platforms are disused.
It varies from about 75mph-140mph, apart from TfL Rail and London Underground, which were going about 50-60mph. The Eurostar trains were travelling at up to 186mph though.

Yeah, the new trains are slightly slower than the older ones but rely on better acceleration and braking.
