      The Food Network just posted a video about how KFC is made. At 1:57 in the video there is an image of the 11 secret herbs and spices. Perhaps the colors of the spices could help to nail down the ingredients. There may be other interesting takeaways from this video as well.

      I don’t know if Canadians love maple syrup more than New Englanders but, fortunately, it’s not a contest. Maple syrup deepens the flavor of anything you want sweetened. Huzzah!!

      Yeah recently it seems to me shes holding herself back very hard. I would too, but Im not sure to what degree a camera could make me behave with that kind of cake in front of me

    One of the reasons why I love this channel so much is that I think you cook the way most people have cooked throughout time, they used what they had. You are also not afraid to experiment and let us know how bad or good it came out. I feel like with the advent of cable TV networks and/or programs dedicated to cooking they focus too much making things perfect. Just like in your cookbook series, sometimes you just have to cook with what you have.

    Licking the spatula was my favorite part. My mom grew up in Vermont and she was very clear about the difference in taste between REAL maple syrup and all the others. After tasting the real stuff, I had to admit she was right.

    The bunny slowly sinking into the pot, smiling all the time was riveting!
    I used your yogurt & milk strategy to make your soda bread -- I used half milk, half yogurt. Bread turned out beautiful and delicious, so it obviously worked.
    But the dough never got unsticky -- when I tried to knead it on a floured board, my hands were just coated with dough. I had to scrape my hands as well as the board.
    I think when (not if, it's soooo good!) I make it again, I'll just leave it in the bowl and knead it right in there since it doesn't need that much kneading.

      It's a fine strat in general. The leftover chocolate from easter/valentines/etc. gets marked down heavily.

    This really is a great cake, even when it lays in crumbles after my failed attempt to get it out of cake tin. When its still warm its so moist and it got a great crust.
    This will definetly go into my standard recipe book, so thanks for the recipe and keep up the good work.

    One substitute I use for buttermilk is to take 1 tablespoon of vinegar or lemon juice and add enough milk to reach a single cup and continue with that ratio until I have the amount of liquid I need. I don't normally buy yogurt or sour cream, but I always have a little vinegar or a lemon in my pantry.

    My maternal grandmother was from New Brunswick but I grew up in Vermont. Maple is definitely an eastern North American thing not just a Canadian ingredient.

    Glen, when I need buttermilk, I use 1 T of vinegar sit in 1/2 C of milk. Works fine.

    If you're using only baking soda it's important to have something acidic in your batter (like buttermilk or yoghurt) to help it rise. Otherwise it's better to use a pre-formulated baking powder.

    I've never seen anyone make buttermilk like that. I don't buy any because I don't use it often but when I do I make mine by adding white vinegar. Could I do the same with this recipe?

    It depends of the chocolate company. I had a Lindt chocolate bunny that was very good. See's Candy is also very good. You may have heard of Sarris Chocolate living where you do. All excellent chocolate, bunny notwithstanding.

      They make acidulated milk, that will activate the leavening agent (baking soda), but acidulated milk lacks all of the other flavour and tenderising components of buttermilk. It's a pretty poor substitute.
