I am reverse searing a frozen ribeye in a convection toaster oven now, it looks like it was left outside your yard for 24 hours, ;). I'll update how it comes out. I hope for an internal of 115-118 F until I sear it.

great video! Have you used Grill Grates to finish it off instead of the griddle? I'm wondering if the grill grates would get hot enough and you can add them to your SB.
I don’t own the grates but I’ve heard good things about them. It would also add time to the cook while you remove the steak and wait for the grill to heat to higher temps. They do work though. Thanks for watching and commenting, Chris!

Hi, Red! I actually was going to sear the edges but my Griddle was so damn hot that I blew through my target temps as it was lol. On the logo and animation. I had a friend of mine design the logo. Red Banks believe it or not, I’m also using iMovie and I’m using it from the phone lol. I’m gonna start using my older MacBook soon and buy Final Cut Pro. That’s what almost all the big guys are using from what I can tell.

I never bring it up to room temp when I’m smoking. Colder meat gets more smoke is the rule of thumb. I really don’t recall how much time cause it’s been a while but I may have stayed in the description. Sometimes I do.
That is a beauty Mike. I love the charcoal flavor on steak and other meat, but like Greg at Ballistic once said, if pan or griddle searing is done right with extreme heat, it can produce it's own one of a kind flavor. Very juicy. I could almost taste it. That hand carved spoon with channel logo is awesome. Barlow BBQ is awesome. They even had me wanting to try a taste of Octopus this morning. Lol

Tight. Swap out that serrated steak knife for something thin, plain edge, and sharp. Even a cheapie Opinel will do the trick, like $15 on Amazon, or a $20-40 Victorinox or Hickory if you want to spend a little more. You'll get a smooth clean cut that looks a lot better on camera.

Literally should NEVER slice a steak with a non-serrated knife. Those clean cuts detract from texture
