@LESLIEADKINS-qz2sv it’ll really depend on the thickness of your steak, I think this one was about 20-30min. Give yourself about half hour and if you need to rest them a little longer before dinner time, it won’t hurt.
The principle for reverse sear is what I’ve shown in the video. Cook indirect until you’ve reached 115° for medium rare (mentioned in the video), rest, sear over direct heat at high heat for a minute or 2 per side depending on thickness, rest for another 5-10min and then eat. The temperatures I used are really irrelevant when you follow the process.
I cooked this one at 250°. Depending on the thickness of the steak and how long I’ve got before eating time I’ll go lower than that but generally, 250°

What temp did you set the smoker at once you started the sear?
I set it to high, with the lid open you’re not gonna get a whole lot of ambient temp cooking, just direct heat from underneath.
