I start most things indirect, including steaks, because I burnt a metric buttload of chicken cooks on a Smokey Joe back in the '80s. I had to learn to put the coals on one side and the food on the other. So reverse sear makes a lot of sense to me.

The reverse sear method is my favorite. Fool proof medium rare every time and it’s sooo yummy 🤤

You are right! A food thermometer is one of the best investments in making good food. I don't trust myself to cook chicken without one.

Its time to try it! If you do it over charcoal, I like to wait until the smoke is pretty clear or else it can be overpowering.

Lucky! Things are starting to wind down here for most people, but I still grill all winter.
The answer is no. Sear the steaks first and then move them to the cooler side and finish. I only use a reverse sear if im doing a large roast.
