    Don't do the rolling pin thing. TAKES way too long.... Put in a Vitamix OR a food processor, or a regular ol blender.... Seriously.... A wasted 10 minutes ...

      I have no food processor or blender so I have to do it that way😝

    Overmixing the Mixture
    When you overmix the batter, more air is incorporated into the cheesecake batter. This causes the cheesecake to rise and fall, leaving cracks on the surface of it. This can be prevented by having all your ingredients at room temperature so you can mix less to get the ingredients incorporated.

      I don't buy it. The only thing I've ever done to cause a cheesecake to crack was to try to force cool it quicker than you should. I use a hand mixer and get fairly vigorous. I also blend but not whip my eggs and put them all in at one time. I also cook slower and cooler than most.

    Wow, that’s a whole lot of nilla wafers for the crust. In a 10” pan you only need 1 1/2 to 2 cups of crumbs for whatever bottom you make, that includes going up the sides.

    I like the fact that you are using mascarpone cheese. You cant find it in our stores so i make my own.good recipe except for the lemon and zest.however I know you did the crust for the children to be involved. So I can just put mine in the vitamix. No need for snide remarks, just do it your own way. Good information tks for the time. Good recipe. Nicky

    if you are doing the crust in a ziplock bag, add the sugar and butter to the bag and smoosh---no extra bowl to wash!

    😂 poor lady, she messed up the cake. The parchment paper was all over the shop so she did not achieve a nice finish on the cake, so she smothered it in cream. Baked cheesecakes do cook fully through in the oven and are not suppose to be jiggly. Bad recipe!

    I do find the process of grounding your cheese cake base biscuit is unnecessary and you make the recipes look very complicated . simply put the biscuit in food robot electric . over all your cheese cake recipes can be easy and straight forward . I don't know how on earth you want to make it hard for the viewers.

    This is the FIRST VIDEO IVE SEEN EVER THAT HAS PARCHMENT UP THE SIDES IF PAN! I do exactly same thing, because if possible leakage!

      It’s only necessary if the pan leaks. Most use it so you can remove the bottom pan to serve on plate.

      No. It has to cool first outside on your counter.
