I applied 3 months before my travel dates still they accepted the application and later on even embassy provided me visa but before my travel dates. My question, why do they even ask for itinery or flight tickets if they do even see the travel dates. They just provided visa before my travel dates

In this case multi entry visa is a good option for you. If you have a good travel history they can provide you multi-entry visa even if you apply for the single entry. yes dummy tickets are acceptable, you can show the fresh balance but 6 months of consistent balance is better

you need to check with VFS if they ask for 1 yrs ITR. I think it must work in your case but do cross check with them.
