    I sent you a note yesterday saying that I found your videos. As I watch more of them the more you remind me of my family. It may be different decades but you could have been my father. You even dress alike. We had lard but mostly used our smoked bacon grease. I enjoy your videos.

    Hey Micah I thought some body might loose a finger when you set that plate of bacon down 😂. I’m glad you cooked the bacon I was wondering how the real fatty bacon was going to be. I never thought of Cracklin‘s ,my gosh I bet they are great!!!great video!!! Happy New Year!!!

    I've used bacon grease (drippins) my whole life for cooking frying potatoes, eggs. And fresh caught trout and greasing my skillets especially when making cornbread.

    It is good for healing wounds on horses too! I always keep a jar of bacon grease on hand.

    A lot of the oldest people I have known grew up on lard, bacon grease, and real butter. They lived to be nearly 100. But keep in mind they also raised their stuff like you. And they ate a lot of stuff from the garden, high in fiber. And they worked hard. We are killing ourselves eating hydrolyzed oils and food so processed it should be illegal to label it as food.

    Lol, I always save my bacon grease too! I have to try my eggs in bacon grease. Gives them alot better flavor. Apparently I've been hearing that it makes good Lynx cat lure as well.

    We only ever saved bacon grease for bear baiting. I got lots of bacon to try this out.

    Great video, as always. If you've never done this, try using the bacon grease in sweet baked goods, in place of butter, margarine, or shortening. (Cakes, cookies, etc..) Sounds gross, but the effect can be amazing.

    You should try baking the bacon. 350 and flip about 1/2 way through! Still get the grease and the bacon doesn’t shrink as bad, at least store bacon!

      @@McGieHomesteadAdventures also not to tell a man how to do his job but when you smoke fish use this: 3 parts of any brown sugar and 1 part of NON IODIZED salt and then any other spices you want. Put the dry-brine on and leave just as you have always done. Then when the time is up you can rinse it, I do, or not but IMPORTANTLY hang or place on racks and let it dry well. I usually rinse and then blot with paper towels and rack it for 4-5 hours, longer if it’s colder which is better. You want the surface DRY because it will take smoke better. Then either hot smoke or cold smoke until it’s dry but not a rock. Then it’s fish salad, on sandwiches in pieces, salads, fish noodle casserole etc. Also that blood/ line if you score it to the skin but not through the skin, then you can scrape it out with a spoon before you do the salting process, it takes some of the “extra fishiness” out if you want to.

      @@McGieHomesteadAdventures also so there is no misunderstanding the dry brine stays on for 24 hours. 48 for fish jerky. And when you brine do it in a container. After it’s ready it will be in a liquid, that is where the salt and sugar drew out the moisture. And when I rinse I don’t go crazy. Just trying to get the excess salt off. You can leave it on if you want a saltier profile. But you must let that fish at that point get dry. Really it’s a dry tackiness that you want, that’s called the pellicle and it helps the smoke stick and penetrate the fish.

      No refrigerator necessary. But I do keep most of it in the outside kitchen where it’s cooler than in the house. I’ve never known bacon grease to spoil.

    I'm thinking their diet will determine how much fat is on the hogs.. I know mine does😭.. I've seen other mangalitsa'😂s butchered with more meat in their bacon. I used to have a hog, Matilda bell.. she loved beer.. she loved everything😂..

      I put it in glass canning jars when it’s hot and tighten the lid good so that it seals…… it will last for years like that, but it doesn’t last that long!
