    omg thank you ! while other recipe calls for sweet potato starch and I dont wanna go out and buy a specific flour for this, your ingredients of tapioca and rice flour, yes I have it!
    ok now need to order oyster online.

      Both types of starch are ok but tapioca starch is a bit more chewy which I prefer 😝😝 Have fun trying this out 😍

      Yes you can use sweet potato flour too. I find there is no big difference for me 😆😆

      It is quite similar 😆 though it is using a chilli sauce 😂

    Thanks for this recipe and demo.. I've been missing and craving this a lot..nice shortcut version of the chili sauce hehe..also really appreciate your explanation regarding the starches..if the tapioca makes it gluey(can you recommend another starch/flour that can also be gluey?), what's the function of the rice flour? N what's a possible substitute? As well as the shao hsing wine, any possible substitute you can recommend?(sometimes such ingredients aren't available in our nearby grocery store :(

      You are most welcome. You can use cornflour instead of tapioca flour as it is less gluey. Rice flour helps with the gluey texture and wheat flour will be the closest alternative. You can use dry sherry if you can't find Shao Hsing Wine : )

      Yes this is one of the popular Chinese cuisine. The taste is very nice especially when you dip it into the chilli sauce which is sourish. Yummy! ha ha!!

    I wonder if the batter would brown better if you added 1/2 tsp sugar and 1/2 tsp baking soda. Also just realized that you could top it with Japanese mayo.

      This is not Taiwanese oyster omelette, it is Singapore/Malaysia version. 😆
