    Eggless Tutti Frutti Sooji Cake made with 100% semolina!
    Rava cake is a pretty popular Indian cake and is really easy to make at home. It does not require any special equipment or expertise, which makes it a perfect beginner’s cake. You can hardly mess up this cake, it is so forgiving!
    No flour, no butter and no eggs needed to make this simple semolina cake which goes so well with a cup of tea.
    This cake is just one-bowl, so easy and the red and green tutti frutti makes it just perfect for Christmas.

    Ingredients :~
    ▢2 cups fine sooji , do not use coarse variety
    ▢1 teaspoon cardamom powder
    ▢1 cup powdered sugar 120 grams,
    □¼ tsp salt,
    ▢½ cup plain yogurt 180 grams, whisked, I used whole milk plain yogurt
    ▢½ cup oil 80 ml,
    ▢1 & ½ cup milk 200 ml,
    ▢½ teaspoon vanilla essence
    ▢½ cup + 1 tablespoon tutti frutti 85 grams
    □½ cup + 1 tablespoon dry fuits 85 grams
    ▢1 teaspoon baking powder
    ▢¼ teaspoon baking soda
    ▢2 tablespoons chopped cashews & raisins
    Instructions :~
    1. In a sufficiently large bowl, add curd/yogurt,, oil and powder sugar, whisk it well to get rid of any lumps.
    2. Then add milk & semolina powder and mix until well combined.keep them rest for 15 mins.
    3. After 15 minutes of resting the batter, preheat the oven to 180° C (350° F), and position a rack in the middle of the oven OR preheat the kadai for 10 mins.
    4. After 15 minutes, the semolina will have absorbed the liquid, and the batter will become thicker.
    5. Now add some more milk,salt ,baking powder, baking soda, vanilla & Cardamom powder and whisk until all the ingredients are well combined.
    6. Fold gently using a spatula, until no more flour pockets are visible. Do not overmix the batter.
    Add the tutti frutti, dry fruits and fold in gently.
    7. Insert a baking paper in baking pan. Transfer the batter to the prepared baking pan. Gently tap the pan on the counter to release any air bubbles. Top with 2 tablespoons of tutti-frutti, chopped dry fruits.
    8. Bake on the middle rack, for about 50 - 60 minutes or until a knife inserted in the center of the cake comes out clean.
    9. Remove the cake from the oven and let it cool in the pan on a cooling rack for 15 to 20 minutes.
    Then remove from the pan and cool on the rack completely.
    10. Cut into desired pieces and serve.
