  • you can make stick jaws or all day suckers. really cheap and easy to make. makes 12 toffees. recipe below.
    12 hole muffin tin
    12 paper patty pans
    toppings all optional
    100s and 1000s, chopped peanuts or coconut. you can put anything on.
    have a bowl for hot water and a pastry brush ready incase needed
    large saucepan
    3 cups sugar
    1 cup water
    2 table sp malt vinegar or brown vinegar
    put on stove top on medium stir and dont stop til it starts boiling.
    as soon as it starts to boil do not stir....set timer for
    14 mins for stick jaws or
    17 mins for all day suckers
    sit on tea towel wait til bubbles almost stop
    pour into patty pans
    set timer 2 minutes then decorate
    allow 12 hours to set on a bench somewhere
    store in airtight container or tin. do not stack on top of each other
    ive never had them longer than 2 days :)

    Yum! This was the first recipe I ever made when I was a kid. I’ve had every variation- too soft, too burnt, too brown too pink/clear/green 🤣🤣. Every birthday kids at school would bring these as the treat :-) thanks for the trip down memory lane

    Great video, I haven't seen toffees like this for years. These days you wouldn't be allowed to bring toffee with peanuts to a school fete. As for the humidity issue, in order for toffee to set hard you need to boil the syrup until it reaches a certain temperature. For this to happen a lot of water has to evaporate out of the syrup while it is boiling. If there is a lot of humidity in the environment then the water won't evaporate out of the solution very well and so what you will end up with is a thick syrup and the toffee will never set. This is why in confectionary factories they usually have a climate controlled environment.

    Yummy the ones you call stick jaw and you cook for 14 minutes are they chewy where as the other are the hard ones we'd all buy at the fete
