Ok, this kiln impressed me. It's super well thought out....with slots on the sides for large racks, and backend slots for the skewers themselves. With preformed coal, the temperature, timing, and sequence of moving the foods for grilling can be repeated and perfected to an exacting standard. Talk about paying attention to details of grilling. Super cool! Suzuki-san's presentation is incredible. Shizuka and crew, great job! This was a cool episode!

About 10 years ago I stumbled into an incredible Tempura place In the backstreets of Shibuya. I have been fortunate enough to have eaten at 2 different Michelin star rated Tempura restaurants in Tokyo but I still remember that fantastic, lively and creative place in Shibuya. I have tried and tried to find that backstreet place over the years but no luck.
need to experience what those Love Hotels are like, I also love a good hole in the wall restaurant but this definitely takes it to another level, love how the food just melts in your mouth

An unexpected hidden gem of a place with secret garden a professional chef behind it too! The food looks stunning, although I still would love to know more about the sourcing of the Shark Fins. Hopefully it's from a credible humane sourcing. The chef's backstory is very interesting and I'm glad he's turned a new leaf from his delinquent times. I hope he gets his Michelin dream come true :) :) P.S: I hope the venting system is good for the kiln and it's not hot inside when it's being fired up o__o P.P.S: The hotel for "loving".... well that's one way to say it, Shizzy-nee :v :v

Everything looks delicious and beautifully presented, except I was a little turned off by the shark fin. I know shark fin is a delicacy in China and other Asian countries, but the U.S. has banned the buying and selling of shark fins because of unsustainable overfishing and the inhumane practice of removing the fins of sharks and discarding the less profitable carcasses at sea. Does Japan obtain shark fins that are brought in naturally attached to the sharks? I wonder.
I normally enjoy watching your videos; however, shark fins have to be one of the most unethically harvested foods in the world. I had to stop watching the minute that you started eating that. I immediately lost interest.
