For your anxiety, as soon as you get up or before bed, get a workout in and then take a shower...taking care of yourself helps...getting the blood flow to the brain helps...even taking a walk down the street and back helps...put you some wind chimes out on your porch and sit out there with your coffee or iced tea and relax and listen to the birds...smell the flowers...little things we take for granted bring us calm... If something can wait, let it wait...take care of yourself first...
You can donate the rice cooker... your instant pot cooks rice excellent...equal parts rice and water with your favorite fat (butter or oil) and hit the rice feature...
