    I just made and canned the pear butter and pear sauce recipes! I got 5 jars of pear sauce and a 3 of pear butter. I put the extra into little custard bowls. So now this is my reward. They are both delicious! Thanks for the tutorial. I never learned to do this stuff when I was young. I'm retired now and learning to do things I wanted to learn when I was young. I love your videos.

    We never use vacuum packers or water baths to can. We use citrus, salt or sugar as preservatives and bake our jars in the oven to 215 degrees. As the jars are needed they are removed from the oven and filled to roughly 1/2 to one inch of the top. The jars rim is wiped clean and the lids are screwed on and the jars are allowed to rest wrapped in a bath towel. Since the preserves are 160 degrees and the jars are 215 the jars will seal themselves and you can literally hear the lids pop within minutes. Easy peasy no fuse canning at its best.

    I have that large pan too, bought it at a thrift store for 4 dollars . Love it. Be careful of using any dropped fruit as the fermentation process can begin. I have made psychedelic sauce by mistake and its potent ! We had a pheasant that came to our Baldwin apple tree each year for fallen apples and would get drunk as a lord laying on his back .

    I think you could cut down the cooking time and actually improve the flavor of the pear butter by cutting the pears into quarters and letting them dry in the sun for several hours before cooking them down. The oxidation of the fruit (turning brown) will bring out some of the complexity of the flavor and increase sweetness. We let our apples sit and brown for several hours after cutting them up before we press them into cider. It makes the cider much more flavorful, and adds a deep, rich color.

    I really enjoy your videos. One thing I would like to mention to you is the misconception of sugar preventing botulism. Actually it's not the sugar but rather the acid in the fruit. Fruits have a high acid content, whereas vegetables don't. That is why you must pressure can vegetables, but fruits are safe to can with the water-bath method. The acids are also what let's jellies and jams stay good for months in the fridge after opening, whereas vegetables go bad in a couple of days (unless canned in a vinegar brine which makes it acidic). Now, many fruits do need sugar to gel especially if they don't have much natural pectin. So sugar will affect the jelling process but sugar free jams and jellies are fine if you use a pectin that is made for sugar-free fruit preservation. I really enjoy your videos, I just felt that it might be helpful for you to know that. Like yourself, I grew up canning on a farm (but in Oklahoma many years ago) and I still love to can my own food even though I live in town now, lol.

    Using it as a base for strawberry products is a great idea! I never thought of that. We dont can alot of pears, mostly just eat them while they're in season and the ones that dont get eaten in time, I grind up in my Vitamix and pour it in my compost or straight in the garden beds. I'll try using it in fruit leather though....thanks! Dennis

    I have access to a ton, cases of free fruit my sister and brother have big property so as they get fruit or veggies they can't even handle it. Plus neighbors and friends share. So i took your recipe but did it up in the extra large roaster to soften the pears in a big scaled amount. I did separate them in batches and did different tweaks to flavor each batch. My favorite is a plain lightly cinnamon flavor the others go well on roasted meats or added to curry sauces or in fish marinades. Thanks

    Thanx, will try, i was wondering if you had a recipe for pear honey, my wife use to make it with her mother but she is unhappy with with what she makes even thow i think its great, thought maybe your grandmother or mother handed down recipe that would ring a bell for wife and remember what she thinks she is forgetting to put in. thanks you really do have a very good way of teaching folks, and things that need to be taught, you must be an old spirit, God Bless

      Haven't tried making pear honey yet but if you check allrecipes.com you will probably find what you need. People submit, review, and rate recipes there so the high test rated ones are always great

    Thanks for sharing, very interesting..... We never had that many pears on our few pear trees to can..... Funny story..... my first wife got a bunch of pears and wrapped them in paper green and stored them away in drawers in a cold upstairs bedroom..... When they ripened up and became soft the liquid leeched out into the wood and froze all the drawers solid so they we had to bust up the wood to get them out.... That was a disaster....LOL....

    Thank you for this video!! At harvest around here people can't give the pears away, and I KNEW there had to be something that could be done with them. Funny thing- we have applesauce 3-4 times a week with dinner. And I have a pressure cooker. Love ALL your videos btw! Thanks again:-) p.s. my cats,Butters and Kittyboy own my spaces too.     Hello HT! I’m happy to see this video! Apples r ok, but I love pears more!!! I will be making pear butter now that I know how, thanks to u, the ingredients u put n it, does sound tasty. I have a pear tree, but I think it’s the cooking type, I so want to get a Jerusalem pear tree, I hope I find who sells them cause I’ve never heard of them. Thank u so much!!!

    may I please ask you where you got your pots from? and what they are called? they are the kind of pots i am looking for for cooking.

      Those pots were more than likely handed down from an older generation, they don't make them like that anymore. Your closest option would be cast iron but it turns most things grey unless they have been generously used. You may also find these type of pots at flea markets or thrift stores.

      Look for cast Aluminum stock pots. Amazon has them.

    Years ago my grandma gave me a bacon press. Basically it's a flat copper disk with a pattern of 1/4 inch holes and a small handle in the center that you lay on bacon while it is frying to keep it flat. It fits in the bottom of my 14 inch iron fry pan perfectly and it fits on top of my bigger steel sauce pans. I discovered this when I was canning homemade spaghetti sauces and they were popping all over, burning me and messing up my stove. It cuts down on the mess and pain immensely. I bet you could get your guy to make one for you out of steel or copper that would fit over your pans.

    I worry about putting that heated food from the stove into a plastic blender. I feel that it will leech some of that plastic into the food. That is plastic not glass?

    GREAT JOB!! I am starting on my hard pears now. Bartlett's are done. The d'Anjou pears are ready. I don't want to peel them all, lol! I started using my Ninja to smooth in the skins so it's not noticable.
    I'm not a fan of orange extract and juice. Will lemon work in your recipe or does it have a purpose other than flavor?

    i been thinking about planting a fruit tree in the front yard but cant decide what type been thinking either apple or pear because we live in the mid west if i want pear butter now ill have to buy it at the farmers market

    You should use glass sterilizers for your jars.. You can buy it very cheap at micro-brew stores or online.. Even something like white vinegar or iodine will work good. You want to make sure not to have any bacteria in your preserves

      I use my water bath for sterilizing (20 min) after they've been washed in the dishwasher.
      Pull, fill, & return... just keep the lids loose and pop them off just as soon as you pull them out of the bath.

    Really enjoy your videos. I planted 2 dwarf pear trees a few years ago. This year I had enough pears on one tree to do something with. I am watching your videos to see what i will do. Fruit leather sounds good as i do have a dehydrator. I did notice that they were a bit tart when I tasted one. They have gotten softer after sitting a few days like you said. Can you tell me if the dwarf pears are a good choice for what your doing?

    I love that cat! the Pear butter looks wonderful, what's with the orange, do you taste the orange when it's finished or does it just give a depth of flavor. I've made apple butter many times but not pear butter. I cook my apple butter in my Nesco roaster oven as the heat is on the sides and not the bottom so risk of scorching is so slim and I can cook it over night with cheese cloth over it rather than the lid.
    I can't believe you still have another 100 pounds of pears to process.

      eckankar lol I ended yp canning several hundred ponds. The orange isn't a strong flavor it's more of a light contrast for all the sweetness

    Don't you just love the ninja? I have some of the personal blending cups too, they are great for smoothies. It's even powerful enough to grind corn or cinnamon sticks. Making pear sauce reminds me of raising babies. I used to make it for baby food, you keep that in mind sister, just in case ;) love your videos.

      Permaculture Prepper no these are very soft pears. They're called Jerusalem pears

    You don't need to add sugar at all in canning. Mary's Nest canning pears.

      That drives me nuts too. Cat goes to the litter box, steps in who knows what...then walks up on the counter top..around all the food & utensils. Disgusting.
