Hello friends! Today I offer you 3 fantastic pasta recipes with aubergines that will conquer everyone! The first recipe is wholemeal spaghetti in tomato and walnut cream with aubergines. This light and delicious first course is perfect for lunch or dinner. Instead of wholemeal pasta, you can also use white pasta. If you avoid Parmesan, this pasta also becomes vegan! The second recipe, I assure you will love the whole family! Eggplant carbonara with hard-boiled eggs is a very unusual and incredibly tasty first course. For this recipe I used rigatoni, but you can use any other type of pasta you prefer. I also propose an excellent solution for not throwing away the egg whites, given that only the yolks are needed for the pasta. It's a delicious pasta, a must try! The last recipe is one of my favorites! Rigatoni with aubergines, bacon and tomato sauce is a delicious first course, perfect for lunch or dinner. I cook them very often, especially in the summer and my family loves this delicious and satisfying pasta! You just need a few simple ingredients and very little time to prepare it. - 250 g of wholemeal spaghetti
- 1 eggplant
- 10 cherry tomatoes
- 2 cloves of garlic
- 5-6 walnuts
- Parmesan
- 1 hot pepper
- Salt and pepper
- Olive oil
Recipe N2
- 4 eggs
- 1 eggplant
- 1 onion
- 250 g (9 oz) rigatoni pasta
- 50 g (2 oz) of parmesan or pecorino
- Salt and pepper
For the stuffed egg whites:
- 3 cherry tomatoes
- 1 tablespoon of cooked eggplant
- Parsley
- 2 spoons of mayonnaise
- 1 clove of garlic
- Salt and pepper
Recipe N3
- 250 g (9 oz) rigatoni pasta
- 1 eggplant
- 1 onion
- 1 tomato
- 1 clove of garlic
- Bacon to taste
- 250 ml (1 cup) of tomato puree
- Parmesan to taste
- A few basil leaves
