Well, he's using a Wüsthof Classic Ikon 4086. I have that knife as well and it costs about 50-60 Euros.
I'd say it's worth the money, though.
As a culinary teacher for middle school, I've tried to teach my students how to use "the claw" so they don't cut themselves. Now I can just have Jacques Pepin do it. I'm sure they'll listen to him. Splendid!

but this is the first one that actually allowed me to significantly improve my knife cutting skills! This man is such a great teacher!

Same here. Jacques is truly a legend who makes cooking easy and fun. I remember watching him and Julia Child on PBS every weekend as a little kid. I learn so much when I watch him or Julia Child. They are my two favorite chefs

The Zwilling Pro line is just as good, but a bit less expensive and has a curved bolster, which makes it perfect for the blade grip. If you're looking for a professional chef's knife, I recommend checking out both: the Wüsthof Classic Ikon Chef Knife 1040330120 and the Zwilling Pro Chef Knife 38401-201-0.

As a Chinese Cantonese man, we have a traditional knife called the Cleaver. One of my favorites. Very versatile and convient for scooping up the chopped veggies after prepping. Everyone should at least get one of those.
I learned how to peal properly while watching Chef Pépin and Claudine in the mid 90's on PBS

I learned about tucking the thumb a little too late, and I have a very deep scar to show for it.
Same here. Knife went right through my thumb nail, and quite deep in the flesh several years ago. Will never make that mistake again.

You don't need a serrated knife if your other knives are sharp enough
If you are cutting a lot of bread it is probbably easier to have a serated knife than keep sharpening your other knives
OMG I did that with my thumb @ 1:22 cutting celery. Lesson learned :D

I can count by the fingers in both hands the amount of times I made a mistake whilst chopping and that number keeps going down every time so I must be getting better at it.
In fact he uses 4 knives with the peeling knife. Great chef.

Chef - Do you no that Cook WRarchel - said there are 265 apple varieties in New York State.?.
I also got way too many knives. You need a paring knife, a small utility knife (+- 6 inches long), a Chef's knife (8 to 10 inches), a serrated bread knife, a sharp filet knife (great for so many other things than filet) and a good pair of kitchen scissors.These are the only knives I really use. Sometimes I use a cleaver (bones) but honestly my Chef's knife would easily do the job. I can probably do 95% of everything I need to do with these knives.
And a pallette knife....
