      83 vs probably 33 if I had to guess...50 years his senior I’d expect Jacques to have a few skills to teach him. I’ve been watching JP for 35 years...he’s one of the best right up there with Julia. Kid had a valuable opportunity to hang out and spend some time in the kitchen.

      This shows the greatness of a true master. The man you are calling a kid is a test kitchen professional. Meaning he knows his stuff. He's very good. The fact that he was taught new techniques from Jacques, shows how great Jacques Pepin really is.

      Just remember though: The amount of wine you consume is inversely proportionate to the number of fingers you (are forced to) learn to use! In other words, the more wine you consume, the fewer fingers you get to use! :-))

      I have never seen a technique like at 23:59 before. His technique is much easier and faster as well. I'll definitely be using it when making mince garlic and herbs from now on!

      joe jitsu oh, yes, of course. I am aware of the ignorance and arrogance of the average young person (under 30, and sometimes even over 30) of today. They think they have nothing to learn from anyone and that everything is better today. I.E. no reason to listen to someone from the past.

    A wonderful thing about Jacques Pépin when he teaches, is that when the other person says "I do it this way," Jacques never says that it's no good. He recognizes that there is more than one way to do things.

      He always diplomatic. It's impressive really. With that said, I really needed the host to either wet his towel more, or have the plastic thing that goes under the board so they don't move. I personally just use scraps of non-adhesive grip shelf liner. You can get it at any general merchandise retailer (Target, Walmart, etc.) in the kitchen section. Those work the best, IMO.

    I find it amazing that Jacques Pépin is such a master, yet so humble, humorous, and relaxed as he teaches. Besides watching him to learn, I watch him to chill when I'm stressed out. Finger cuts are no fun, and take time to heal, and after dinging myself a few times, which since I'm a piano player is even less fun, I came across another Jacques Pépin video explaining basic knife skills, and (knock wood) I haven't cut myself since. Merci beaucoup, Monsieur Pépin!

    The best knife-skills tutorial I’ve ever seen! How cool it is to watch such a seasoned expert - a real artist with food, and such a charmer too! The knife is an extension of his hand. Nice to know that I have been doing at least some of these techniques correctly - now I can refine the rest! Over the years I have bought any number of fancy chopping gadgets and one by one they have gone to charity shops etc., and I always end up turning to my knives and a chopping board. With the right technique, you can do absolutely anything with a good sharp knife. I’m just a humble home cook but I love to learn how to do things correctly.

      It's not what you rlly know it's about having a legend next to you shows you what over 70 years of hard work and mastering the real techniques of French cuisine which is the hardest, the most technical and the "best" don't judge me I'm not French but for real Jacque is an absolute master especially when it comes to technique I mean he wrote 2 books called 'La Technique'

    I learned how to cook and how to use a knife about 25 years ago and in no small part from Chef Pepin. I used to record his shows starting with "Cooking Techniques" and I'd watch it over and over to pick up every technique. It's difficult to think of anything else that's improved our lives more than learning how to cook really well from scratch. What a lucky kid, to learn from not only a true master, but an international treasure.

    Love Jacques Pepin. I've been watching him since he and the late Julia Child had a cooking show on PBS. I've been cooking since I was 10 years old and still haven't mastered my knife chopping skills. This video really gave me a better insight on how to properly use my knives ( I have many battle scars from them lol) So glad I came across this video. Thanks for sharing and as Jacques used to say, "happy cooking"!

    People must remember that Jacques skills were born in a restaurant where speed was required. His comment about the amount of potatoes he could peel reflects this. Don't be discouraged if you never become lightning quick like Jacques. He had to be quick or find another job!

    I genuinely appreciate this video. I'm coming back a year later to say how much it made coreing and peeling apples and handling strawberries just, kind of effortless for me. I love taking both ends out of an apple, peeling the apple and then cutting it down the middle and taking the core out with quick twists of the wrist. I did have to shop and buy a taller profile paring knife because I have large hands. I highly recommend everybody shops for a knife much taller than the average paring knife from spine to Cutting Edge if they're not comfortable pinching the blade. It NEEDS a sharp point though or you can't do detail work like coreing strawberries. My paring knife is nearly an inch tall and I'm super happy with it, where I was never comfortable with the shorter blade on my old paring knife in my hand with my fingertips against the sharp edge

    I am so impressed with the wonderful Jacques Pepin! I think the reuse of food scraps should really be driven home because it seems to me that a lot of food is wasted today. Jacques, you are brilliant, sweet, funny and sexy! Thank you Josh for having this MASTER on your show!

    As a professional cook, I still haven't seen anyone with half the skills and techniques as Chef Jacques. It's just years and years and years and years of practice and repetition. I bet just about anyone will be trying to impress a legend if they could cook right next to him. But what a great video and for making it

      Sadly, that was the one point when I was disappointed in Josh .. he called it ‘old school’, almost as if it’s a technique that has no use anymore. Chef then upped his game on the garlic . Lol.

    Young guy keeps bringing up stuff he learned in culinary school and Jacques is like ”um, ya...sure?”. He has so much experience he has surpassed traditional technique and knows what works, especially for him. He has mastered his own technique.

      Interesting you say that~ I was thinking the same exact thing! Chef Pepin was incredibly gracious & unpretentious-- but let's face it, without meaning to, he schooled the kid. Young Chef Josh got more humble & respectful as the tutorial went on, and I was glad to see it. Mssr Pepin is a living legend; it is an incredible honor to have the opportunity to learn from him. Some day Josh will realize what a privilege he had in this video. :) Meanwhile I'm knocked out by the elder Chef's amazing skills, perfected over a lifetime. THANK YOU for this wonderful video, which I've saved so I can watch again later. :)

    I admire Chef Pepin for everything he’s done. Love to watch him cook and this video was very helpful. I would smile just like the young man joining in and very happy to have done this video with such an important figure. I have a TH-cam channel and started a year ago.       That "simple" adjustment of the placement of both hands tremendously changes the action of the knife. This is an eye opener for me.

    I always like Jacques because he seems like a regular person. He does not act like an arrogant celebrity chef even though his name is known worldwide. He has accomplished more than most men ever will, but he still just keeps everything simple and down to earth. He doesn't add pretentious flares to his food. He is always relatable to his audience, no matter what their skill level.
