yay Chris' mom! Like the oil free sauteing. I sometimes think the youngins don't care about it because...well...they are young and aren't yet worried about cloggers arteries. Thanks for us older people struggling to get rid of the grease on the lips and the hips. I know....bad.

great recipe... thanks for the share. PS my Italian mom and grandma used the term "gravy" when they used meat ( usually pork and beef bones) with the tomatoes cooked all day long. Sauce was meatless marinara (tomatoes and spices only). But, whatever; times change

We like Daiya..but looking for something a little better.. making meals that taste amazing and in many ways better than non-vegan versions of the same dishes.. keep up the great work..I am writing a book and I would be honored if I can share you guys as a great vegan reference!

some vegetarians don't consume onions or garlic or any other alliums for religious reasons :)
And that's their choice so it's not a crying shame.
samantha aldaine or because they have gastrointestinal issues (like me). I miss garlic quite a bit but the reaction it causes isn’t worth cheating 😖

I think I would rather bread it because it adds a little something to it. Maybe you could even bread it but just not fry it, though I do like when it is fried.
Shouldn't you wash off the salt after using it to draw out the water in the eggplant? If you don't, you've got two tablespoons of salt in the dish, in addition to the salt in the ricotta and the sauce.

"Gravy" has meat cooked in it. Meatballs, pork chops, short ribs...that is simply sauce 😉
Robin H does it really matter? Gravy is a type of sauce anyhow!
