    I have to agree, that pork belly is the best bite in BBQ. Easily the best thing I’ve ever cooked. So so good and quite possibly the easiest thing to smoke. With all the fat, it’s dang near impossible to over cook.

    Awesome video Rus! The Ole Hickory pits just flat get it done. The cold snap we had here in Kentucky awhile back when it was 5 below, I fired up the cto let it settle in at 250 rolled some ribs and briskets for some neighbors in my area for them when their electric went out and she purred like a dream.

    I love some good pork belly. My local supermarket sells it skin on. Just sone salt, dry it in the fridge for a couple of days and roast it in the kitchen oven. Because it lays flat it is so easy to evenly cook great crackling.

    Awesome cook, bro. I haven't done burnt ends in a while. The sauce by Bartolini's has a great flavor. Chris is a cool dude and hilarious. They sent me some of their Chicago deep dish pizzas. They are the best I've had. Love that pit, too.

    I've lived every Ole Hickory I've ever used or owned. Adored my CTO. Small, but mighty.
    The OHPits excelled over Southern Pride. The SP doesn't burn clean, and I can taste gas in what it produces every time. I don't get that with OHP.

    Thanks so much for this video! This smoker is really interesting as well. I’m torn. I understand the buy once cry once idea. I guess this is an endgame smoker for you? I guess the only thing a pellet grill gives you over this is maybe easier lighting and the ability to sleep while you are cooking? Correct me if I’m wrong.
    One more question if you don’t mind…If you need the pit to be able to grill and smoke what pit would you go with? I like the LSG pellet but worry about the small grilling area….I also like their offset vertical stick burner.

      I can sleep while running this pit as well. I can get 6 hours out of one wood split. I personally have never used my LSG pellet grill as a grill. I use my Pitt's & Spitts flat top adjustable grill when I need to grill. It does way better than any pellet grill when it comes to direct grilling with not only a large grilling area, but a large range of temps due to the fire grate being adjustable with a 18" range from top to bottom.

      @@SmokyRibsBBQ that all makes sense! I really appreciate your perspective. I don’t think my wife will buy off on me having that many grills. I did see that LSG makes a grill similar to that P&S you are speaking of and it can smoke as well. Wonder if that would be a good option to have.

    So how does flavor stack up against offset stick burner?

      If I had to chose between my offset or my Ole Hickory then it would be the Ole Hickory. Not a doubt in my mind, but luckily I get to keep both. The only advantage the offset has is it only requires wood which is a good thing in case of a SHTF situation

      In all honesty I didn't even notice the final temp. I pull them off when they begin to probe like butter using a thermometer probe or other pointed tool. Burnt ends need to be super tender, or at least that's how I like them.

    Only thing bad you can say about their pits is if you have to ask the price you can’t afford one. I looked hard at them but decided on a Stumps at almost half the price

      They do cost a lot, but stainless steel and their quality is not cheap. They sell them worldwide and after this cook, I know why. I rather spend $6k on this smoker any day over a $4k pellet grill.

      I agree, I wouldn’t spend that kind of money on anything that won’t work without electricity that’s why I landed on a Stumps Gravity fed.

    Rus you never lied about the pork burned ends. I'm gonna make a statement the reason you prefer the pork over the beef brisket is because everyone trim so much fat off it. Fat makes the burn ends. What in the beginning of BBQ people didn't trim the Brisket like we do today. If you did want to eat Fat you pealed it over before you at and put it to bean or gave it to the dogs as a treat

      I agree James! So many people cooking in their backyards and doing comp style briskets where they trim too aggressively and getting rid of the very thing that adds flavor, and tenderness which is the fat.

    dont laugh, but im not sure if i told you this before, or if you have seen any of my grilling videos, but i have a gas grill and, not too long ago, i discovered the “smoker box” where you put small chips of apple wood, cherry wood, mesquite, etc, right above the fire, but below the grates, and it makes the gas grill and food smell/taste way better. :-)

      Yeah, must gas grills come with smoke boxes nowadays, plus you can buy them separately for added smoke flavor.
