    조선우엉1킬로 껍질 벗기고 씻는다
    굵은 부분 칼집 넣고 20분 찌고 뜸들인다 포크가 들어가면 된다.
    냄비에 진간장100밀리 술80밀리 쌀조청200밀리 건고추1~2개 생가가루톡톡 넣고 한소끔 끓이고 식힌다
    우엉을 식히고 방망이로 쳐서 납작하게 만든다
    보관용기에 우엉 한 켜 깔고 양념 슬쩍 바르고 계속 쌓고 남은 양념 붓는다.
    윗부분 안 마르게 종이호일 덮는다.
    2~3일 숙성 후 먹는다.

    우엉은 껍질에 좋은성분이 다 있습니다 . 물에 10분쯤 담가 뒀다가 살살씻어 우리나라 전통간장에 볶아 먹는게 최고의 건강반찬. 첨가제 없는 건강한 양념으로 먹는게 관건.

    저 우엉은 우리 어릴 때 60년 쯤 전에 시장가면 조선 토종 우엉이라고 농경기 시대에 재래시장 가면 자영 농사짓는 사람이 시장에 내다파는데 잘무르고 향기 좋고 ~~ 생산성이 떨어지니 요즘 우엉, 보기 좋고 생산성 좋은 것 농사 지음.토종 우엉 잎은 또 얼마나 맛 있게요. 잘 무르고 쫀득쫀득. 요즘 사람 그 맛 알기나 할까요?

    아직도 우엉 껍질을 깎아내는 분이 계시네요,깎아내는 장면에 흠칫 놀랐어요.사포닌도 많고 영양이 껍질에 많다고 살살 문질러 씻어 껍질째 요리 하는걸로 알고 있는데요

    ㅠ 답답합니다 말소리 설명이 안나옵니다 작은 글씨가 뜨지만 계속 돗보기를 해야되고 눈이 피곤 합니다

      두드릴 때 도마 밑에 두꺼운 타올이나 담요 깔고 두드리면 된답니다. ~~^^
