    Also, do not be afraid to hit up the international or ethnic markets. I found like a crisco size container of ghee for $15 bucks. Don't like plain white rice? Most Asian or South Asian/Indian markets have basmati and/or Jasmine rice.

    Good reminders. Having food stocked has helped so much during this pandemic. We don’t need to go grocery shopping very often. Also dried herbs for teas. A hot cup of tea is very comforting.

      Your country agriculture department will have written instructions now, classes when covid ends, and someone you can call and ask questions until then.

      They teach a lot of skills in their courses! You should sign up. It has helped me learn to be more sustainable.

      Best to begin with jam in 8 ounce jars. Don't double your batches unless you know it is compatible with your recipe.
      We did a big batch of reduced sugar strwaberry jam last season. It lost its ruby-jewel color. We didn't add enough lemon juice/citric acid to retain vivid color. :( (Some varieties hold color better than others)
      Not a big deal but you want it to look as beautiful as it tastes.
      One thing always to remember about canning at home. Sealed does not always mean safe. Acid levels and correct processing methods are crucial to safety.

    Plus there's certain foods for the Holidays that you really don't need all year round. Anyway that's in our family. So I try and get those things about a month before,and prepare pie crusts,sometimes put the ingredients together and freeze it so I am not rushed,or get too tired getting holiday meals together for the family. But if course I am older.

    Great Advice,...and you look amazing! i just want to say that in certain Countries it is very important to store WATER, WITHOUT WATER IT GETS REALLY DIFFICULT.

    I would add seeds for sprouting or growing microgreens, which you can grow any time of the year. My favorite are broccoli seeds

      We make great use of sprouts in the winter up here in the far north of Canada. It's so important to do what you can to stay healthy when there is no gardening for 9 months of the year & the stores don't have the best quality produce available

I now have another excuse to have on hand when I buy another cookbook for the collection lol One of the large reasons we bought our current home was the floor to ceiling bookshelves in almost every room. The cookbook collection is.... massive. But I'm just trying to not rely on the internet! ~big innocent eyes with fluttering eyelashes~ Think my husband will buy it?

      Anyways the big can savings added to the price of glass jars and the price of my time probably wont end up saving me money. It will probably be more expensive...
      Just buy the 'little' cans

      @@backwoodsbaby9729 You wouldn't believe the rabbit holes I went down on the internet, the searching for jars, the number of hole in the wall grocery stores, hardware stores... Just because Walmart didn't have them didn't mean they weren't out there, bought 3 dozen pints 3 dozen quart on Walmart on line delivered to the house cheaper than I could have got in the car driven the 65 miles to the store and picked them up in October. Oh by the way mom does most of it and she is 93, she waited till the fall to decide she wanted to start canning again so we started with zero didn't even have a pressure cooker anymore

    Just a public service announcement. Filling/stocking does NOT mean have 19 years of food that spoils/becomes dangerous in 2. Stock equals good, hoard equals bad/waste.

    Im so happy to see your from idaho! We are as well and are starting our journey to off grid self sustainable living. Beginning stages..lol. beginner canner as well and just completed 15lbs of green beens. Im want to get stocked before we make our move from Meridian to central/North idaho

    I hate the "only what you like to eat" today advice.
    I bet anyone in Stalingrad were wishing for a plate of beans and rice while they were boiling shoe leather...
    If you're actually hungry and not just in a state of discomfort, you'll eat what's on the plate, like many of us did before we were deceived into believing everything would be available forever.
    Because a food crunch is coming, so get ready for it.

    Great timing! I agree- there is comfort in a well stocked pantry. I inventoried our seed supply today, which was also a comfort knowing that we have saved enough seeds to supply a harvest for next year's pantry.

    Carolyn this was wonderful! I have been SO grateful for my own well-stocked pantry this year. But I have found that as a city kid wth no background in cooking, I will stare at all my ingredients and go "what do I make?!?" I'd love to see some videos on how to use basic pantry staples for meal ideas. You did one I think last year that was great! Could you maybe do something on different ways to use up beans and rice (we do burritos, chili, and curry - I'm looking for more ideas!), and maybe how to use all those canned veggies from the garden (aside from soup or a plain side?).

    When there was a run on the grocery stores last spring here in Chicago there was no flour on any of the shelves. The weird thing... There was plenty of lard, sugar, yeast, baking soda/powder, and even chocolate chips. I am still wondering what was made with all that missing flour. :)

      A lot of panic buying was done, also ppl overbought and tried selling on line with a HUGE mark up! They were driving into small towns buying up cleanser, bleach, tp, canned goods.... leaving those folks with nothing. We have definately reached a new level of selfish during this last year.

    Don't forget coffee and tea! Also, a small tank of CO2 from a brewer supply (food grade) will displace the O2 in your storage containers for longer long-term storage.

    Great video, Carolyn! When the pandemic first hit I thought I was well stocked but soon realized a week in that I was super low on baking powder, guess what my local stores were out of? Yep, baking powder! Thankfully the last place we looked was a smaller mom and pop grocery, the shelf was empty but one of the employees took me over to their bulk section and there was still some there! Phew! Thanks for bringing us such great content! ❤️

    I always wonder what those “minimalist” people are thinking when they only have ONE WEEKS worth of food on hand at any given time !!!

      Minimalism is about getting rid of the stuff you don't use. Prepping is about having enough of the stuff you are using to last a while. So they actually can go together just fine.

      @@hillockfarm8404 I’m sure they can but I was referring to minimalist TH-cam’rs who have one week of food....food for hat week and nothing more ! Most prepper’s have stuff they might need but are not using currently....say for instance a generator, they don’t use it for daily life but have it for when they need it. The minimalist TH-cam’rs I have watched live by the premise that if it’s not being used, get rid of it and go buy it when you need it. I just watched one lady who says she feels the price you pay to purchase something is like paying for someone else to store it for you so you don’t have to and it’s not in your way 🤔 Prepping to me is having what you will need in a power down situation, SHTF, depression like before when the banks closed in one day or even war. What if my car electronics are shut down, what if the banks close and I can’t get money, what if a natural disaster strikes, what if the government decides you can’t purchase things, what if we are bombed ......I’m not going to rely on running to the store to get what I need to survive !
      But if you can be a minimalist and a prepper at the same time, good for you !
      One is none and two is one, preppers motto and a nightmare for a minimalist !

    I know a couple that goes to stocksales n get two calves give them shots then let em graze from spring to fall then they butcher one n that gives them a years supply of beef they sell the other steer SA the Money till spring then repeat the thing every year they're only out the initial cost of the original 2 calves they save a lot of money that way try it no more beef to buy makes sense

    I purchase olive, avocado, and coconut oil. How do you prevent your large oil stock of from going rancid?

      She has a big family. She probably uses large amounts of oils during the year.
      However it is always recommended that you keep the oldest thing in front. So you buy a new bottle of oil. Put it in the back, say you have a line on your shelf of 4 bottles. Etc.
      I know from backpacking forums, that you need a couple tablespoons a day of oil to help keep weight on/from getting too thin in an extreme survival situation, and olive oil packs the biggest bang for your buck.
      I feel like a well stocked pantry is good for life living and normal issues that arise, however in a dire survival shtf type situation ive really wondered, is it something i want to live through? Like vast wasteland apocalyptic desert situation...do i really need to prepare? Whats the survival odds really?
      ...and that took a dark turn for rancid oils. Lol. I apologize.

    Always keep extra canning jars on hand just in case. Especially with what recently happened. It was difficult to find extra canning jars so I had to do alot of freezing. But having a freezer isn't a guarantee. Like you said canning meat to have on hand just in case.

    Carolyn when you store rice or flour in food grade buckets, do you do anything special? I’ve read and watched videos of people saying it needs to be frozen because of bugs hatching in it, etc. Thanks for any insight you can give in this subject.

      Yes, we freeze for 3 days before putting into storage.

    Please check out the KNEADY homesteader..we are asking everyone to pray for her and her family. They hit by a DRUNK driver head on .her husband mat was KILLED. Two small children suffered broken arms and shoulders. Heather was in SURGERY FOR 8 hours broken arms. Broken legs and punched lung. God bless.

      Crisco solids don't. Coconut oil last many years...olive oil will turn rancid

    I can all my bacon grease, butter and ghee. Canned a bunch of home rendered lard two months before the craziness started and shelves went bare.
    A couple gallons of blackstrap molasses is a wonderful source of iron and can be used in the garden too.
    I'm a grandparent so I keep lots of candy and chocolate stored in out of the way places. :)

    You forgot to emphasize the necessity of canning supplies. If times get tough and a food crisis arises, we'll need a way to store garden foods throughout the periods when fresh foods are not available. You folks may probably already know this but a one quart canning jar (on average) holds only 450 calories of garden food. In most of North American there are at least three months when nothing will grow. Add to this the three to four months that it takes a crop to bear food and you will need six or seven months of canned food per person to tide you over. Even more if you want to hold food in reserve for crop failures.
    Depending on your area, that amounts to 1000 - 1200 canning jars per person per year. A household of four people would need about 4,400 jars. Do you know anyone that has those jars on hand? And how about lids?
    Even if you disagree with my estimates you should probably be scarfing up every jar you can, because someday soon, some other person (with a head on their shoulders) will want them, which makes jars a terrific barter item.
    It's probably too late for most folks to fulfill this requirement. Had I not inherited 2,200 jars from my grandmother, I would be far behind on my readiness. Currently canning supplies are very hard to find and prices are only rising. Don't wait another day. There are those in government, domestic and abroad, who want to destroy America. It WILL eventually hit the fan.

      I agree with you on all parts. I just canned up a gallon worth of dried navy beans with ham hocks. Monthly food banks give lots of dried beans and no one ever wants them so being a canner I wait till all has gone through the line and ask for the beans. People are foolish to pass them up such good protein, but society has pushed quick fast foods for so long that dried items are plentiful here. So glad my mom taught me the gift of canning as I grew up. I love the fact I can go to my pantry and find delicious jars to make wholesome meals. Happy canning!

      I will add here that where I live (middle TN) canning jars are No Where to be found...for the last 6 + months 😒 but, lids, seals, etc. are still available in limited amounts...so...if you didn't already get them, ur kinda outta luck...
      I do have some, so making do...

      Waxing Sustainable, yep I have seen them. Just thought that in these precarious times, we really need to stress the need for long term storage of our garden foods and meats. I haven't seen anyone awaking people to the enormous number of jars and lids needed in a grid down world.
      Mark my word, turmoil is inevitable and it is coming soon.
      My grandparents filled the jars that I inherited every single year and still made occasional trips to the grocery. They bought lids by the case. Each case had six sleeves and each sleeve had 324 replacement lids (no rings).
      I know that this gal was just listing food but what better time to stress the requirement for jars and lids. There is no better method to store dry goods than in vacuum sealed canning jars that you will need anyway. Just sayin.

    I agree, don't buy large quantities if you won't eat them. March 2020 I bought 20lbs of lentils and kidney beans and then realized my family hates eating them. 😔 Been a struggle trying to eat them.

    These are my staples also. The only thing I would add is powders: whole milk, heavy cream, butter, cheese, etc. My favorite is Hoosier Hill Farms.

    The sweetener and fat thing surprises me a bit. When people lost their fool minds this past year, those were two things that, when I was still going into stores always seemed in stock. I even now have a bit of an excess bump in the pantry now because I was able to stock up on a dozen or so different sweeteners as well as fats. (Duck fat for the win.) Maybe because people don't seem to really cook "real" food around here much? And that was a shocking revelation this past year. Almost every grocery trip ended up twice as long as it should because it turned into impromptu cooking classes for people. Started to feel like I could at least help folks a ~tiny~ bit in this mess.

    Oh your canning(wet) jars should always be stored in a dark dry location , not on the shelf in the video. Dry goods ? , no problem . Great video, I enjoyed watching

    One of the best things to remember, like you said, is only stock up on things you're actually going to eat. I've been slowly switching to bulk purchases for some things that we use regularly or buying an extra bag of sugar for example when we get groceries. It makes it easier to go longer between grocery store trips as well!

      Stop washing it so much. Shampoo strips off natural oil that protects hair from drying and breaking.

      @@chomama1628 me too, i cant stand the smell of all that. A d we had a couple of young ladies from our church that only washed their hair in apple cider vinegar and it started breaking their hair off something horrible. And they only washed their hair once a week also
