Next add all purpose cream. Then add 1 cup of pasta water 15. Mix again and simmer on medium heat until it thickens 16. Add 1/4 teaspoon of ground black pepper. Mix. Add the desired amount of salt 17. (Optional) Add a pinch of rosemary leaves 18. Continue to mix until it simmers (5mins) 19. Give it a taste 20. Put pasta 21. Turn off the stove and mix 22. Add grated cheese and mix until it melts
I'm Italian , but I not very offended , tips If you wanna measure how much pasta you need just form a circle on your hand and determine of its enough for you Don't use garlic or any aromatics You don't have guanciale ( pig cheek ) so I'm not gonna you know Don't use cream , use eg yolks and the cheese or an entire egg Don't put any other spices , only pepper If you have guanciale , use a little touch of oil because it already has a lot of fat , and make it crispy Use pasta water so you can have a very creamy consistency For a Filipino style of Spaghetti alla Carbonara , it's a 4/5 , not bad
