Longaniza is life! Especially if you can find the original kind....the ones made by hand. I got my hands on 2 packages of the store bought kind recently....didn't last week.
@@Chefzeecooks you gotta go to DR for that. That's all I had growing up there...then they started factory making them. They good but the old way was better. It had bigger chunka of meat and incredible flavor. I even saw people en un campo making morcilla by hand from scratch once....that's when i learned they used blood to make it. I left DR when I was 14....long overdue a trip. I'm 42 now.
Hi Chef Zee, I have to thank you for putting out these easy to do videos. I recently moved to New Jersey from New York and in my new area, unfortunately there's only one Dominican restaurant but sadly they are not consistent especially many other restaurants in my town who I simply think they can cook. There are a few Dominican restaurants in New York that I wish I could cook like them but simply can't. You take for granted what you have and once you move, you appreciate it more. Google ratings are also misleading because those who are conformed to the type of cooking in their area food eventually they believe the like it or they just never had good food. That was always the case with pizza, people swore up and down the pizza in our Queens ny area was great and I was like, are they kidding? I've had better pizza and you know it's good because tourist would go there. Thought it was me but even the service was better in ny. Im sorry but the dominican restaurant in my town sucks..I started to learn how to cook more dishes mainly because of the pandemic. I started cooking more from home because many restaurants either temporarily closed or out of buisness. I was craving Dominican my NY style dishes especially asopao de pollo. I first attempted to do it and it came out awesome. I got the confidence to do another dish from you, the chicken noodle soup, oooo it was a hit..that soup is like Crack for us, everyone went for seconds and thirds!! I marinated the chicken a couple hours and it makes a difference.. My beans are also have improved exponetionally and it's gotten to the point where you can eat it like a soup and I think that's the key to a good beans..I have yet to make it from scratch.. when I'm making your dishes, I tend to taste to get the right flavor and by the time im ready to serve, I'm halfway full just on tasting alone. The whole house smells awesome when cooking your dishes.I can't wait to try this dish and others you have. You have been a God send with these videos being so easy to make and broken down perfectly especially for a person like myself who is not considered a good cook. I can make a few things here and there but im always open to try new things if I think I can do it. Thank you, Thank You, Thank You..my Dominican mother would be proud..

This is interesting, I come from a cuban background and grew up in a poor area in Vermont. My abuela would come over from NYC to stay for a week here and there and she would cook Cuban rice and mix it with chopped pan fried hotdogs topped with a little vinegar and should would always call it Arroz Con Salchicas Cubanas lol. I'm half Cuban as well and know all about this Arroz con Salchichas lol. It's one of those dishes that you have as a kid and you look back as an adult and think-- "wow!" Even though it was a modest dinner, it always felt like 5 star dining and it's still one of my favorite dishes to have an adult!

Usually we eat short grain white rice because my wife is from Japan, but we often mix the short grain rice with the brown rice. I love long grain white rice as well. That’s exactly how I make it. The right longaniza is key. Not all longaniza releases the same amount of oil. The Cibao Brand is very good for locrio. Releases good amount of oil, which is what gives it that flavor.

I’m in Atl , culantro (and all the peppers/spices she uses) are at dekalb farmers market and Nam de mun farmers market . Though I used a chicken sausage for this recipe I saw the longaniza she used in Nam de mun farmers market . Hope this helps

Does cutting it in thick pieces take longer to cook than thin pieces? What is the color supposed to be in the inside once done cooking? Wish you cut it in half to see what it was supposed to look like.

You definitely can, you'll just have to adjust the cook times and water to account for the brown rice which takes longer to cook.

Hmmm I’ve never heard of anyone washing longaniza. We’re you referring to the rice? She always washes the rice before hand. Hope this helps

The heat should be on medium/high until the water is absorbed. At that point you put the stove on lowest setting for 35-45 min.
