Ginger works really well with tomatoes, especially fresh tomatoes. They tone each other down and knock out a lot of the acidity and heat and really bring out the natural sweetness. In my experience at least. Canned tomatoes need a little bit more work though since those are very acidic alone.

Because there weren't any tomatoes in Italy before the conquest of the Americas, I feel that everyone's take on it according to the tastes of their own culture is valid. Practically every dish that's prepared today anywhere is based on an older recipe from somewhere else. From migrations to conquests, food - like people - have been changing and mixing for centuries! Don't fight over food, just appreciate it and enjoy! 🖖

I am a Filipino and Filipino style spaghetti is the best version of spaghetti for me. That is why there is a word about globalization, I don't like Italian spaghetti because it's too sour for me, maybe because of the tomatoes 😢, sorry

Even I don't like my pepper and tomatoes fully blended, you need texture for pasta. This recipe is great for my weekday meals, so quick and versatile, I can tweak to my taste. I will definitely add this to my weekly menu planner. PS: I usually prep my ingredients the night before, I also freeze if I have time to make a batch. This looks delicious, but us Italian Americans would never put ginger in our spaghetti. My Dominican husband also has his own twist on spaghetti, which is also delicious, but arguably not spaghetti anymore.
All these "italian" tomato based dishes originated in West Africa ... the cuisine traveled to the Italian peninsula through immigrants bringing it to sicilly and it spread up north. In other words don't tell the originator how to make the dish they originated.

Most cooks may use a blender or mortar to blend their tomatoes , there are new veggie cutters in the market to help chop veggies faster as well Of course if you don't have help, you'd do the dishes. If you see cooking as self care, considering that most store bought foods would have lots of salt,sugar and oil etc , Spending 30 - 60minutes cooking and cleaning is not a big deal considering we spend more than that time on things that don't matter on the long run. Some spend that same time on a queue in a fast food shop or waiting for the delivery person or even walking or driving to the restaurant. Meal prepping also goes a long way to save time I work full time, have kids and cook everyday. Is it hard? yes, but I have chosen my hard.
I do all my prep myself and I clean up after. I prefer to do it alone. I know I don’t have to, and I know I can ask for help but I just like to cook for my family by myself. A lot of people can’t do it as easily but some people can. There’s nothing wrong with either. Ify may do it alone or may use help. She can say cooking is easy and she will be right. You may also be right to say it’s not. My point is, easy is subjective.
Textures matter!!! You are so correct, a lot of people and cultures neglect the importance of texture. That is ok, it’s not right or wrong you should eat what you like. But to myself, textures are in what I consider the top 3 most important characteristics of food. (Taste, texture, smell)

Add a bit of butter to the finished product. Also, saute your veggies and meat with the tomatoes before you put the pasta in.
