The royal family does have a last name. It's the name of the royal house. They're the House of Windsor and royal family members except for those who join the family through marriage have that surname. Royals usually aren't addressed with their surnames tho, never have been for as long as there have been kings and queens but their last name is technically whatever the name of their royal house or dynasty is.
When the British royals need to use last names, they use their peerage titles. So when William and Harry were not married they used Wales, because Charles, their father was the prince of wales. Now that they are married, William has the title, Duke of Cambridge, so if his children, like George or Charlotte, needed a last name, they would use Cambridge. The royal family does have a last name. It's the name of the royal house. They're the House of Windsor and royal family members except for those who join the family through marriage have that surname. Royals usually aren't addressed with their surnames tho, never have been for as long as there have been kings and queens but their last name is technically whatever the name of their royal house or dynasty is.

When the British royals need to use last names, they use their peerage titles. So when William and Harry were not married they used Wales, because Charles, their father was the prince of wales. Now that they are married, William has the title, Duke of Cambridge, so if his children, like George or Charlotte, needed a last name, they would use Cambridge. Harry and Meghan are a little different since doesn't have the title of "prince" (as of now or probably never it seems like due to recent events), his last name is Mountbatten-Windsor. Mountbatten is from Prince Philip (the queen's husband) and Windsor ( Royal family is from the House of Windsor). If Harry or Meghan need a last name, they would use Sussex, (because of their title) or maybe Mountbatten-Windsor, if they want to have the same last name as Archie. And they aren't losing their royal status (HRH) but just won't use it officially.

We British dont really refer to them using their surnames, however, it's quite simple; the Royals carry the surname of their grandfather, Dukeof Edinburgh- Mountbatten and that of Windsor =Mountbatten - Windsor
