    Try closing the top vent over the coals to draw the smoke over the protein.

      True I would also cover the air holes with foil under the drip pans so they don't lower the temp around the chicken.

    Hello. Why not cut three or four inches off your cooking grate. Then you're able to lift off that piece to add charcoal or remove wood.
