    In this video I demonstrate how to cook a bacon and onion clanger.
    Suet rolls, roly polys or 'Clangers' are an inexpensive and tasty meal, and one of Britain's finest comfort foods. Bacon and onion suet rolls are both filling and delicious, hot or cold. They can either be steamed or baked, whichever you prefer.
    Recipe
    Filling:
    200g bacon cut into lardons
    Half a brown onion, chopped
    1 tbsp oil or lard
    Or experiment with sweet or savoury fillings of your choice!
    Dough:
    2 cups selfraising flour
    1 cup shredded beef or vegetable suet
    1/2 tsp salt
    Water to mix
    Method:
    Fry the bacon until it starts to brown, then add the onion and cook until the onion becomes translucent.
    Set aside.
    Sift the flour and salt into a mixing bowl and add the suet. Add water to make a loose dough suitable for rolling.
    Roll the dough into a rectangular shape about 1cm thick.
    Top the dough with the bacon and onion leaving space at the end for the seal.
    Roll the dough up towards the end and press lightly to seal.
    To bake:
    Place the roll seal side down on a baking tray and bake for about 1 hour at 180C/350F.
    Or
    To steam:
    Wrap the roll tightly in baking paper, then wrap the whole thing in foil.
    Steam for 2 1/2 hours, and allow to stand for at least 10 minutes to cool.
    Take care unwrapping because suet rolls retain a lot of heat!
    Serving:
    Clangers can be served hot with potatoes, vegetables and gravy. They also make a fine portable cold meal for picnics and lunch hampers.
    Enjoy!

    Thanks Pete - Pretty much same as some of your viewers below - I'm here because my gran used to make this, she passed away many years ago and I've not had it since (was bacon roly poly here in SE England). I just remember it tasted and smelt great and it invloved a tea towel. Hope all is well, cheers Jase.

    • @LazyCookPete
      @LazyCookPete  2 ปีที่แล้ว +1

      You're welcome Jase. More common than the baked version was the steamed version, which involved wrapping the roly poly tightly in a muslin cloth or tea towel. It was then steamed for at least 90 minutes and often for over two hours. The result is lighter and lacks the hard crust of the baked version. Many would argue that it tastes better too. I enjoy both equally. Thanks for your interest. I really enjoy reading anecdotes like yours. Some traditions are worth saving!

    Thank you so much for making this video !!! I was going through our kitchen cupboards two days ago when I found my grandmas bacon and onion roly poly recipe !! I’m born and raised here in America (unfortunately) with my dad who’s from the Hampton area, so I’m very familiar with the UK as we come visit family every year. Seeing as the world is in shambles, you can imagine it’s been a very long time since we’ve visited our second home, and it’s safe to say my father is beyond homesick. I’m lucky I found that recipe when I did, my moms birthday was yesterday and I’m going to surprise them and cook my grandmas famous roly poly and a shepherds pie so hopefully they feel at home again. The recipe I found was a little unclear though, which is why I’m here ! My grandmas roly poly was for special occasions only and I wasn’t aware it made other people’s childhoods too. I’m so glad I came across your channel, maybe I’ll make English dishes more often now ! Thanks again, I can’t wait to try this out !!!!! Stay safe out there ❤️ 🇬🇧

      I'm so glad you find the recipe helpful. These clangers or roly polys are quite rare over here now and they fall under the label of Old School nowadays. Well Korrina, a recipe will stay alive as long as enthusiastic cooks like you and I keep them so. Thanks for watching!

      Pete Thomas that means a lot, thank you. Hearing that makes me appreciate this meal even more ! I didn’t realize it was such a simple recipe, I thought this was gods work. I knew it was going to be a good day when my grandma would surprise us and we’d smell it cooking throughout the house. So many great memories around this dish, can’t wait to teach my future kids this recipe and hope it continues on. It’s great what you’re doing here, keep cooking !

    A very fine example of a stick to your ribs, hearty, tasty and super easy meal. You cannot go wrong with that, in my opinion meals like this should feature on any dinner table and be considered topnotch fare. My trouble is I cannot get good suet here, so may need to source some elsewhere. Great job again, lots of love xxxx

    • @LazyCookPete
      @LazyCookPete  5 ปีที่แล้ว +1

      Thank you Emma. You have to be careful because there is a lot of false suet made from tallow on the market, and it doesn't taste half as good. I'm surprised Atora is not available to you locally, but it may be available online. Otherwise you may have to tap up an artisan butcher! Big loves xxxxxx

    • @Jim553just
      @Jim553just 4 ปีที่แล้ว +1

      If you cannot get suet, then put some lard or dripping in the freezer and just grate the amount you need, using the large gratey bit, into the flour. It turns out the same. In fact beef dripping in this recipe is amazing.

    When my dad worked nights at the royal mail he'd bring home this but it was cold and he called it a half and half. One side had bacon, onion, gravy /sauce and other things and the other side was a sweet jam. He'd have the savoury part and give me the sweet. It wasn't really half mind, more like 30% sweet, although it was longer.
    You could tell each side by the lines scored upon the pastry, horizontal was savory.

    • @Gunzee
      @Gunzee 5 ปีที่แล้ว +1

      No, thank you for the great clip and a very clear recipe. I don't cook much but I think I can make this.
      I had a quick read and clanger means stodgy or dense, that was in reference to the pastry. It wasn't l originally baked. Rather wrapped in cloth and steamed maybe boiled, like a dumpling. It was usually made as lunch for men working the land. The pastry was there just to protect the filing. The men also had dirty hands so I guess you don't want manure as a flavoring.
      Please watch this, th-cam.com/video/l2B-r6NO9HY/w-d-xo.html
      That's very similar to what my old man bought home. Can't describe how nice it is to see something I enjoyed with me dad as a kid.
      Was the rolly polly of your own adaptation?
      I've not thought about it being part of a meal, you know like a sausage roll it's a quick, tasty snack.
      PS. Liked, subbed and going to binge on your other uploads.
      Expect more very long messages and stupid rambling! Sorry in advance.

    I love the name "roly-poly pudding" !! Never heared of clangers before, so I googled it because I always want to learn ! Nice anecdote I found : "Historically, the clanger was made by women for their husbands to take to their agricultural work as a midday meal: it has been suggested that the crust was not originally intended for consumption but to protect the fillings from the soiled hands of the workers". I also read they used sage to spice it ! Is that common ?
    Suet... we call it "reuzel" or "smout" ;-)

    • @LazyCookPete
      @LazyCookPete  5 ปีที่แล้ว +1

      I really like sage, particularly with pork, but its use in suet puddings like this is a regional variation. Pork, apple and sage make a wonderful filling! Suet is the raw, hard fat of beef or mutton found around the loins and kidneys. It is not to be confused with lard or tallow, which has been rendered and therefore sterilised by heat. The Atora brand suet we use in the UK has been rendered safe for storage to improve its shelf life, and formed into small pellets for convenience of use. Roly poly is a great name 😆

    In Oxfordshire we tend to wrap in muslin cloth and boil
    And lard is used rather than suet. Sounds heart attack inducing but it was typically eaten by farm labourers who would burn off the fat

Our parents and grandparents lived through rationing during the wars and they ate fare like this every day. We have been brainwashed by the TV to think what we are doing now is healthy. At least four aisles of my local supermarkets are dedicated to selling, salt, trans-fats and air wrapped in starch. That is not healthy at all. th-cam.com/video/7Ygo4FbVluI/w-d-xo.htmlsi=cyir9WzHMY3MCKah

      It's good old school English no-nonsense food GB, and typical of the food during the rationing of both World Wars! My brother loves it 😋

    Roly Poly! what a name! 😄

      @LazyCookPete  5 ปีที่แล้ว +1

      Hehe Sonny, it's an old English name for a whole series of sweet and savoury suet puddings which have diminished in popularity over the last 30 years. A common filling was simply strawberry jam. Good old fashioned comfort food!

    This is a regular meal that I do. I usually serve it with peas, mash and parsley sauce (sometimes onion sauce).

      That sounds great John. Parsley sauce is inspired! It will go perfect with this clanger 😋 Ill be trying that for sure.

      It goes great with hot gravy Eric. I'm on a low-carb diet but my brother ate half one day and the other half cold the next day! It is very filling indeed 😋

    Lovely recipe, Pete. A question, What can suet be replaced with? Thank you and I think I'd like to make this for my husband. I'm sure he'd appreciate it. Warmest wishes for the season!

      There is really no substitute for suet Milica I'm afraid. The closest thing to it would be beef tallow, but it doesn't get the job done at all well. Amazon USA has this listing: goo.gl/xLQAeh

      If you cannot get suet, then put some lard or dripping in the freezer and just grate the amount you need, using the large gratey bit, into the flour. It turns out the same. In fact beef dripping in this recipe is amazing.

    I steam then finish off in oven. Use bacon bits; get nice chunky bits then.

    Steak and kidney version possible do you think?

    • @LazyCookPete
      @LazyCookPete  4 ปีที่แล้ว +1

      I would stew the chuck steak until it was tender and add sauteed lamb's kidneys. You could use the steak juices to make a tasty gravy. It's possible but it would take a while.

      I like it steamed too Annie. I just figured that most people don't have time for it, so I went with the quicker baked clanger for this video. My mother always steamed them when I was a boy.

    Is the inside soft?

    • @LazyCookPete

      Yes it is soft like a suet dumpling. It is hard to describe, it is like bread only more tasty.
