      It's far from a great place to live. I live here, in the middle of one of the worst area, SE. I hear multiple gun shots daily, homeless people steal everything from dirty old shoes to your cars.
      Portland may have some cool food options, assuming you can afford it after all the high rent, food and gas costs.

    There is truly nothing more pleasurable than seeing someone do exactly what they were made to do. Brian this series is so totally you; bleeps included. I couldn’t stop laughing during the LA pig roast, the next segment with Pilipino food and this was lovely. You are your unique self but don’t impose that on the story!

      I was pretty good at B ball. Very athletic, and a tough guy. Lots of flips. Playing pickup games with the philipinos. They were awesome.
      But very small. Would bounce off me trying to block. I helped them up.
      Offering my apologies.
      I would tip a throw, high, and nothing but net. 3 point. Loved those boys. I remember them watching as the b ball soared through the air.
      They were better than me. I was just more physically fit and bigger .

    I remember going to a little town near Portland as a kid in the 1960s named Verboort for a sausage festival. Verboort sausage. The best sausage I ever had served family style on long tables with mashed potatoes and all the trimmings including pie for dessert.

    I absolutely love sausage. My heritage is Bavarian, and I pickle everything in sight with my own self-made vinegars. I live and work in Seattle's Pike Place Market where Uli's sausage keeps me reasonably happy but I always love my return trips to Portland. That said, Cleveland's historic West Side Market is a must. When I still lived in Cleveland, there were over 20 polycultural sausage vendors in the market! Tonight dinner is my homemade four-month ferment cabbage, rutabaga, and horseradish kraut with Uli's liver sausage and my own baby potatoes from our rooftop garden. . . happy camper!

    I looove PDX!!! My girlfriends and I used to drive there on a food trip from Eugene when I lived there. Loooved living in Eugene, too! I miss the Pacific Northwest sooo sooo much!

    Best German deli I know of is in Portland. N.W Portland if memory serves. It's been there for over 70 years. Don't know this place as I moved from Portland in the early 70's.

      Sounds like we in Portland experienced an apocalypse. I think we were hit with similar difficulties as everywhere. There was a pandemic, civil unrest, and inflation that hit most of the country from what I understand. We have a lot of homeless. Having been to many cities, it's high, but still comparable.
      Portland still has plenty of businesses. And our food scene was ranked as #1 in the country according to a study by wallethub.
      While you'll find plenty of Oregonians who consider Portland destroyed, I think people should view it themselves, and keep in mind that everywhere is still recovering.

      The only thing that happened to Portland is the tourism dried up due to the pandemic and all the right wing bullshit propaganda about the city burning and riots all the time. The city didn't burn, the riots weren't a big deal, everything's fine. There's homelessness, same as any other expensive city with weather nice enough to survive outside, that's about it.

    Okay, I want to see an update on America's Test Kitchen's choucroute garnie recipe now. I'm mean the one that's there now is fine, but something inspired by Olympia Provision's version would be awesome!! I love that they scored and browned the sausages. There's a really good brined fresh ham recipe at ATK. Maybe adopt leftovers from some variation of that to use in the choucroute garnie? I've made ATK's sauerkraut before, but I'm betting some refinements for this new recipe could really step this up!

    They aren't the cheapest I have ever seen but what I have had of theirs is very good!!! I have some ties to Switzerland and after seeing that he did his apprenticeship there comes as no surprise, they make great sausages over there. Do they make Cervelats also?

    SO INSPIRATIONAL. I lived in Bavaria for four years and it spoiled me rotten for good wurst. Every little village had its own recipe, and each one was full of actual ingredients and no filler. It was so disappointing to come back to Australia to mediocre charcuterie. I wish we had Olympia Provisions here.

    I wasn't sure they were going to covering Olympia provisions off the title. There are a few other really good sausage makers in the city. Olympia is great, and they do so many things. Their charcuterie is also top shelf.
    I've seen the owner before on youtube. I didn't live in Portland at the time though and never made note. He was on a show called Price Points where he identified high end meats.

    This is cool I'll have to check it out! I work in Portland Oregon. And live over the bridge. I'll definitely have to try his line of products. I have a question though I don't know much about these processes why would you want moldy meat? Genuinely curious.

      It helps and aids with fermentation. And is totally harmless, unless you are allergic to penicillin. Very similar to the white mold you get on Camembert and brie :) Hope this helps. Also, Hi from New Zealand :)

      Mold and yeast can be used as tools in foodmaking. In the use of white mold for his salumi, that mold is protective. It is a relation of penicillin. It prevents other, bad bugs from setting into the meat. It also adds to the flavor of the charcuterie. There are bad molds for food, but they are specifically culturing a type that's safe for humans. This is similar to how yeast cultures work, or sauerkraut, where we are using good bugs to keep out bad.
      Sounds like you live near us. It's totally worth checking out. They can be busy later in the day. If I want to go there, I try for when there's less traffic (I'm sure you know since you commute).

    My favorite meal in Portland is the grilled miso salmon at Widmer’s Brew Pub, across the street from their brewery. Comes with roasted fingerling potatoes and a tossed seasonal greens salad with miso dressing. I splurged on dessert. Before the meal, I splurged on a tasting flight of the brewery’s product. I love Widmer’s Hefeweizen !
