      Ik kom ook uit het zuiden en ben van indische afkomst. Indo's in mijn familie zeggen altijd pindasaus, omdat de saus simpelweg van pinda's is gemaakt, voornamelijk naar pinda's smaakt en niet noodzakerlijkerwijs alleen voor saté bestemd is. Satesaus echter, is voor mij een variatie verschillende sauzen, meestal een kruising tussen de nederlandse en indische keuken waarbij soms de pinda ver te zoeken is en de zoete ketjap regeert. Echte pinda saus is voor mij in ieder geval de bruine saus die voornamelijk naar pinda's smaakt,.

    We never use sambal as Fries sauce. It's more a condiment to Indonesian food. Put some on the bami or nasi (rice) for example. Same for the sweet chili sauce, but you said it correctly. Nice with loempia's, bapao's and other eastern meals. But it tastes good on everything.
    The pindasaus is heaven. In the north we don't eat oorlog with onions. But you can ask for it.
    A lot of people call it curry ketchup (and indeed Germans too) because it's literally ketchup with ( curry) spices and herbs in it.

      Some of us do, though (sambel on fries). Even though I also had never had it before I moved to Rotterdam (twenty years ago). Since then sambal and fritessaus (together) on fries are one of my favorites at Bram Ladage. Nothing beats actual mayonnaise though. Too bad most snackbars only stock the watered down fritessaus and just call it mayonnaise on their menus. Which they officially aren't allowed to do. You guys forgot Bram's truffle mayonnaise. Which is pretty good as well. And, not a sauce, but don't forget to also try a frietje stoofvlees if you haven't already (as a good place though please).

    The peanut sauce varies wildly depending on what snackbar you visit, some places it's really thick and other places it's almost liquid, some places it's really sweet and other places it's quite spicy.

    Frietsaus basically uses thickening agents because it is cheaper than oil, it just can't be called mayonnaise due to regulatory reasons (mayonnaise requires at least 70% oil and 5% egg yolk).
    And yes, most frietsaus will have added sugars.

      Standaard is pinda/sate+mayo/frietsaus+uitjes.

      Woow, we also called it a Frietje / Patatje Oorlog in the classic homemade snack bar in Eindhoven where i work between '90 and '92 and that place was already 45 years old at the time!
      But nowadays they think Fries with Peanut Sauce, Onions and Frietsaus or Mayonaise is a Patatje Oorlog! 🤯
      But i always say, there is no war without blood, so there's no Patatje Oorlog without curry or ketchup! 😎✌🏼

      I am recent diagnosed with diabetes, my dietist asked if I didn't have any cravings.
      I told her I was in youtube therapy, watching people eat until I wasn't hungry anymore.

    I think i've heard that McDonalds developed that sauce specially for the Netherlands (and later Belgium) to cater to our fries with mayonaise culture, and cause it's still different from mayo and McDonalds is an American company we Dutch started calling it American sauce ( we didn't know it was only served here and not in the US)
    Don't know for certain if it's true, but that's what i've heard.

    YES For fries and/or snacks: mix mayonaise or fritessaus or even sate-sauce or Joppie sauce with sambal oelek (% at your own taste) Nobody (almost) in NL uses sambal only for fries...

    Currysaus is such a specific taste, and you can go years without having friet speciaal and you remember every bite of the sauces and onions and fries combo at a snack bar as if it was yesterday.

    I love pindasaus/satésaus. And I also love appelmoes. These 2 sauces are standard in my kitchen and basically used more then even the simple mayonaise.
    When some vegetables werent as nice back in the day I was a kid, I always put some appelmoes on it and it made it livable. Pindasaus just fits fried food so well to.

      Its very popular amongst turkish people to order mayo and sambal at bram ladage. They often combine sambal with yoghurt in their own cuisine. i grew up in an area with lots of turkish people. As a kid our new local Bram Ladage didnt have sambal on the menu back then. But there was always a big jar of sambal oelek on the counter so the turkish customers didnt have to bother with asking for a side of sambal with their patatje met. It got so popular that they eventually started charging people for it. They were always running out! lol

    I don't think I've ever seen someone using sambal oelek as a dipping sauce for fries. It is quite populair with kapsalon paired with garlic sauce though!

      Over here in the south you still can often get piccalilli sauce, although sometimes they only have a regular size pot they have to scoop it out of, unlike the huge buckets of fritessaus with handpumps. We also get many Belgian sauces, like Andalouse, sauce tartare and sour mayo (a distinct, lemony version).

    Do you know the origin of the Lays Joppie? Its the winner of the Lays Maak de smaak contest from i believe 2010 if i recall correctly. you were able to get the top 3 (Babi pangang, Joppie and Mango red chili) in stores for a while and vote on the best one. Joppie won that hands down.

    Sweet chili sauce has so much going for it here in the Netherlands. Next to it being an amazing sauce/dip. It can also be used for a marinade with chicken or karbonade. It does taste so freaking good then. Same with sambal btw. Though the ultimate marinade is hoisain sauce. I can't live without.

    There used to be a sauce called Diesel sauce. It tastes great with fries. But I havent seen it around anymore. Also Sashlick saus is also great with the bereklauw.

    Pro tip:
    If you want Fritessaus at home, buy Oliehoorn. It is hands down the best one (imo ofc) and is the one many snackbars use.
    Also, had a chuckle at "Ketchup friet speciaal, I don't know why you would do that."
    Exactly. Especially when they don't have Heinz (although quite a few do in my experience)

    You should try and make the peanut saus yourself. Beryl Shereshewsky made it on her channel in her Peanut disches video, a month ago. And she ate the fries as a patatje oorlog

    From my experience the frietsaus vs mayonaise really depends on where you order your fries. Especially in the south they'll always carry different types, so make sure to specify which saus you want with your fries.
    As for the samuraisaus, it will be different depending on where you order it from, some places will have yoghurt based mayonaise or frietsaus and will mix it with different types of sambal since that is where the spice comes from. From experience the redder and thicker the saus, the spicier it will be.
    A lot of the different saus options will be different combinations of the "base" sauses, you can get a crazy as you want with the options.
    One thing you're missing is the stoofvlees, i'm fairly sure it's more popular in the south.

    CUrry and Mayo or Satesauce and Mayo both with onions on top are pretty normal to order. The first is a Frietje Speciaal and the second a Frietje oorlog.

    And here I am always just ordering fries to go from the snackbar and open a jar of appelmoes at home. Patat en appelmoes is such a childhood favourite for me. The only thing I will change the appelmoes for is peanut sauce. But I generally prefer peanut sauce with Indonesian food. And then there's of course the times I didn't have appelmoes at home and I just improvised with mustard, as I also had some kroketten. Works well, to be honest, but there are better things than that.

    I often mix Remia mayonaise with Sriracha (7 parts mayo, 1 part Sriracha) for over my fries 😛
    ... Also as addition some raw fine chopped onions in it is delicious

    There's also Patatje Hopeloos in some areas of the Netherlands where they have Peanut, Mayonnaise and Curry sauce with the onions. It means "Hopeless", or "No hope for you"

    Pindasaus is meant to be a kind of satésaus. Seasoned with sambal, soysause, gemberpoeder, korianderpoeder, komijnpoeder, uien and knoflook.

    Pindasaus sounds great. Peanuts go very well with fried things, hence peanut oil fries. And it is the king of savory across southeast Asia thanks to satay and pad thai. Makes sense.

    There is one sauce missing imo, which might be a bit more of an Amsterdam thing and it's also limited to one fastfood chain and that is patatje grillsaus from FEBO. It's basically the sauce they put on their burgers, but you can order it for fries as well. So if you are ever near a FEBO make sure to order a patatje grillsaus. For me it's on the same level as samurai/joppie saus.

    The Remia frietsaus is quite sweet. The Gouda's Glory is more tangy and closer to mayonaise. The AH housebrand frietsaus ain't bad either. For an easy dip, just blend Hela currysaus with some mayo or frietsaus

    Old fashioned here with Remia and Gouda's Glorie not that I won't use any other sauces. From time to time add a nice dab of sambal to it. (Sambal Manis that is)
    A lot has changed since moving to America, so I always go berserk at the snack bars and fish shops. when I visit my family in The Netherlands.

    There is another variant of Oorlog, it's called different at different shops (Puinhoop or Nucleair where i come a lot) but it's just oorlog + curry saus

    The difference between frietsaus and mayo is that real mayo needs to have 70% fat and 5% eggyolk, and everything below that is called frietsaus :)

    I’m allergic too mayonaise and most of the sauces are mayonnaise bassed so I can’t have any of them.
    I can have ketchup but don’t always feel like it, there exist a few ketchup like sauces but most friteries usually only have 2.
    More then often I have it without Any sauce at all.
    If a product is good it doesn’t need Sauce, if you’re product is crap you can coverup a lot with sauce
    Or if I know a Friterie that has good “Stoofvlees” (beef stew) I use the Stoofvlees Sauce or same thing if the Friterie has Goulash

    I always hate the raw onion on everything, but I love the pinda and fritessaus combination. The creamy, heavy flavour followed by a lighter flavour is my idea of a perfect hungover food meal.

      Speaking about cheese sandwiches, do you remember the "cheeser"?
      It was pita bun with jam and cheese, then warmed in the oven. It was invented by the dutch dairy council to boost cheese sales.
      They made a commercial for it which I thought was very annoying.

      Most of Europe does at least all the EU countries becasue they are not allowed to serve anything else as fries if it's not 100% potato, the only difference can be they use different potato's. Same for the burgers they are all 100% beef free of growth hormones, EU laws are pretty strict about what can go into food and it's why for alot of Americans visiting Europe you usually hear it tastes so mouch better over here.

    I love the ending. Reminds me of Police Squad, where they also do the freeze-frame laughter ending, but then after a little while one of the characters starts to move while the rest remains frozen. I'm sure 100 people have already said this by now, but "below the rivers" you typically get real mayonnaise instead of frietsaus. As someone from below the rivers, I am surprised you'd rate frietsaus a 4! It always tasted like watered down sugary (real) mayo to me. The best sauce for those Bram fries to me would be Belgium (Flemish) mayo. It's like regular mayo but a bit more tangy. Also super easy to make at home.

    I sometimes mix curry with Zaanse mayo when I eat fries at home. Has to be Hela curry though.

    Try Patatje Oorlog (War Fries)! It's like patat speciaal but the currysaus is replaced by pindasauce; so frietsaus, pindasaus and finely chopped raw onions. So good!

    I live in Drenthe, am from Brabant, and I have to say: The Brander Mayonaise is great, and in Brabant the Belgian sauces are my favorite: Belgian mayo, Andalouse, Tartare etc. They are delicious.

    You should try brander mayonnaise. Its like a mix of mustard mayonaisse and spices. You can buy it at the supermarket too

    5 eetlepels pindakaas
    150 ml water
    1 theelepel sambal
    1 eetlepel bruine suiker and/or appelstroop
    2 eetlepels ketjap manis
    1/2 limoen
    heat and stir

      I always use milk instead of water, but it's always good to make it yourself, that way it's just as sweet/peanuty/spicy as you like it - which very often is an issue with the peanut sauces you get from snackbars - or maybe I just don't like the same sauce as their owners :)

    I gotta say, Joppiesaus is prolly the best with fries.. but I'm also a HUGE fan of pindasaus.. the thing with pindasaus is, there's a LOT of variations of it.. there really isn't one precise recipe for it, some are really sweet, other are tangy, spicyness can differ a lot too.. there are so many variables to it! I prefer a more down to earth flavor, but I feel the more mainstream version is the sweeter variaton.
    My pindasaus recipe in broad strokes is like this (I'm really guesstimating measures here, cos I'm always just eyeballing it) :
    - 6 spoons of water
    - 3 big spoons of Calve pindakaas (basically, spoon with a big head)
    - 1 big spoon of Conimex Javaanse pindasaus starter (optional, adds a bit of flavor)
    - 1-2 spoons of soy sauce (don't waste the expensive stuff on this)
    - 2 teaspoons of sesame oil (key ingredient! this adds a lot of flavor!)
    - 2 teaspoons of sugar
    - 1-2 teaspoons of MSG (FUYIOH! also a key ingredient!)
    - 1 teaspoon of Maggi aroma
    - 1 teaspoon of garlic powder (or a few ground cloves of garlic, optional, depends if you have business meetings the next day or planning or smooching someone lol)
    - 1-2 drops of Mad Dog 357 (do NOT mess around with this stuff, it's CRAZY HOT.. but besides being CRAZY HOT.. it also adds a lot of flavor!) (alternatively, add 2-3 teaspoons of sambal, tbh, it's the safer option)
    - Keep an eye on cooking the sauce.. you don't want it too thick or too runny.. add water when you feel it's necessary to get the right consistency
    Again.. DO NOT MESS AROUND WITH MAD DOG 357!!! It's serious stuff.. If you got some of it on your fingers.. wash your hands AT LEAST 3 times or you'll regret it next time you're going to the bathroom! I speak from experience!

      Using sambal instead of 357 adds a lot more salt, so ease up on the soy sauce instead.. when not using the Conimex starter, you'll need less water.. it's a balancing act

    As a kid my parents toned down mustard with some mayo. Maybe not for fries, but as a kid mustard/mayo mix (stired) with lets say a rookworst... Omnomnom Still like it every now and then, prefer mustard over it now tho.

    As a kid, I always use to have apple sauce with fries. Unfortunately, they (almost) never have those at snack-bars, and since I didn't liked mayonnaise nor ketchup, I always had fries without sauce as a kid when we were eating out. 😅 Nowadays however, peanut sauce all the way for the fries, whether I eat out or at home (although I still eat some snacks with apple sauce at home every now and then, even though I'm 32 years old by now, haha).

    Sweet chili sauce is also known as "Alles is lekker saus", everything tastes good sauce 👌but uncommon for fries, but all snacks like chicken nuggets, meatballs, etc. And even stamppot.

    zaanse mayonaise is also a one of a kind mayo type here in the netherlands, most mayos here are more neutral in taste, sweet and creamy, as dutch people are one of the few to put sugar in mayonaise compared to the rest of the world, as a dutchy i prefer the belgian variety little more sour and the one with lemon is very nice.

    Sambals are in soo many different flavours, however they should be hot and spicy. Best eaten with a kapsalon or broodje shoarma 😊 Also the bottle of McD sauce is a special item as far as I know. It's not always for sale.

    Replace the curry sauce of a special with the original or sweet loempia sauce on the fries or frikandel. 👌🏼
    You guys like Piccalilly, so you should try it with frietsaus or mayonaise on the fries, its delicious and in a good snackbar you can get a really thick Tartar sauce on the fries, you'll love the tanginess. 😋✌🏼

    On the curry/ketchup confusion: curry is a type of ketchup. It's tomato ketchup with more herbs. But most Dutch folks think of it as distinct from ketchup because they think 'ketchup' just means basic tomato ketchup.

    As others suggested, the peanut sauce goes amazing with berenklauw or a grizzly (spicy breaded berenklauw). And when it comes to frietje (I'm from the south) oorlog, it should be peanut sauce with real mayonnaise. The balance in that is way better. Just in general I never really like frietsaus that much, its not bad but just a very unimpressive saus in my opinion and mayonnaise is almost always just better.

    actually try the sambal badjak carolina reaper :P ifyou wanta bit more spicyness :D , and if you want to best combination its french fries fried in Beef Tallow with the sour belgian mayonaise ;-) the sour complements the fries perfectly

    In Nederland is het wettelijk vastgelegd dat Mayonaise minimaal 70% vet en ten minste 5% eigeel moet bevatten. Fritessaus bevat dus minder dan 70% vet (vaak 25%). Daarnaast zit in Fritessaus veel meer suiker en /of Zoetstof.

    Curry is awesome and the best one I get is from Hela and it is indeed called ketchup curry. The tiny Zaanse tube had me crying. Zaanse is my favourite and I get the larger plastic squeeze bottles. It’s a shame though that a lot of snack corners sell fry sauce as mayonnaise since they are so different and fries with real mayonnaise are so much better

    Curry saus originates from Germany. It's called Curry Ketchup because it basically is just that, a spiced variant of ketchup ^^ (In German it's called Currygewürz or Currygewürzketchup)
    In Germany, it is the basis of the dish currywurst, one of the most popular in the country

      When I lived in the US I attempted to make curry ketchup by indeed mainly combining actual (Heinz) ketchup with curry powder, soy sauce, and a few other ingredients/spices. But it turned out almost exactly like the typical German curry sauce you get with their sausages, which is very different from e.g. Hela (which also is German). Hela & friends are much sweeter and a little less sour (not as tomato-y?).

      i think fries with anything other than ketchup is a pretty strange concept for most americans unless you’re at a fancy restaurant, which is funny
      at nice restaurants in the US, fries are typically served with “aioli” which is just a fancy word for mayo 😂
