He's not out-playing the strings; this is a trio, that means they should be playing relatively equal parts. (And there's no way a piano could out-play the timbre of a violin, those upper harmonics will pierce through anything.) And having multiple instruments playing in parallel motion, octaves or not, is a common artistic choice, and here they only double octaves for about a measure or less. Hardly seems to be overdoing it.
I have to wonder why piano boy insists on over-playing the other two. Right around 2:28 he starts banging the crap out of the chords and doubling octaves in the bass. Dude, they're only a violin and a cello... they can't make as much noise as you can. He does the same thing in Stairway to Heaven.
