Dark caramel will have a bittersweet taste that's a perfect fit for this delicious cake. Some have asked me about a dry caramel. To start with a dry caramel, add the sugar to a thick-bottomed pan and spread it to form a uniform layer. (You don''t have to add any water at this stage.) Heat it on medium heat without any stirring. It will start caramelising from the edges. After a good amount of sugar has caramelised, reduce the heat to low and start swirling the sugar around by tilting the pan this way and that till all the sugar has caramelised. Keep swirling it, and as soon as it gets a deeper brown colour, turn off the heat. Carefully add in the hot water, and stir the caramel syrup with a metal spoon. The caramel will start bubbling and release a lot of steam. This is a quicker way of making the caramel syrup, but you have to be extra careful when caramelising the sugar as it can easily get burnt. Thank you very much for this recipe. I wanted a substitute for the Christmas cake as it is time-consuming. This tasted very much like a Christmas cake with a beautiful rich dark colour. I added 3 cardamoms and a teaspoon of cinnamon powder. It looks like we can add 1/2 cup of water to make the caramel as I found the 1/4 cup to fall short. Splendid recipe. I shall bake this in large batches for Christmas to distribute among neighbours and I would surely spread the word around about this wonderful recipe. Thanks again. God Bless!

But depending on how thick or how watery your yogurt is, you might need to add a little less or a little more of water at the end while adjusting the consistency of the batter, if it's necessary to adjust it. Also, reduce the oil to 3/4 cup + 1 tbsp. Everything else will stay the same. Enjoy! And thanks for the appreciation.

Veena dear wanted to write last night about my experience with the cake. As I told you earlier I was lucky to use my weighing scale so the measurements went right. I had a problem making the caramel. I did exactly as you said and on low flame since am used to making the caramel for the christmas cake. I used a pan just like yours a thick stainless steel pan. The sugar melted and I was waiting for the color to change but instead all the water evaporated and became sugar again. I continued and at last the color changed. I waited for a while to get a dark color then I put 1/4 cup water and had to put it back on the fire to thicken it a bit. It was fine and instead of adding 2 tbs extra oil to the 1/2 cup I just went with 1/2 cup. The rest was the same. The cake is super delicious and moist as ever. Only the baking time in my oven took 1 hrs 15 mins but it is all ok and super delicious. Tku veena. You are a wonderful person. You were with me and answered all my Qs. Tku so much and God bless you

Yes, making the caramel is a little tricky as the sugar has to start changing colour while it is still in the melted stage. Anyway, so very glad that in the end, your cake turned out great. @@pauljaya774. you're right. But even without the lemon juice, if you make the caramel correctly, there's no major problem with crystallization. Some people even add a little butter towards the end to make sure the sugar doesn't all crystallize again. If just a little sugar crystallizes along the walls of the vessel, there's no problem because when you add the water, this crystallized sugar from the sides dissolves into it.
I love any form of cake recipe though l am diabetic. I like this cake with dates & carrot. I will try this recipe with some modifications like only wheat flour. Use coconut sugar with low glycemic index for people like me. Instead of caramel just use insstant coffee powder.

For an eggless version, as a replacement for each egg, you have to add around a 1/4 cup (55-60g) of yogurt. Just see that the yogurt is not too sour. Also, adjust the consistency of the batter in the end. If it's too thin, add in some maida.

Veena do you tightly pack the cups. Looks like you have added 1/4 cup water to the caramel twice. Please confirm. The umpteen Qs are because am in the making.
In the beginning, you have to add only 2 tbsp of water to start the process of caramelization. After the sugar caramelizes to the colour you want, turn off the heat. And immediately but carefully stir in 1/4 cup warm water. .All this is mentioned in the video.

Thanks for the appreciation, Elia. Yes, you could drop the baking soda and add 2 tsp baking powder instead. I included baking soda, because I've made this a healthy recipe by including whole wheat flour, which is denser than maida, in the recipe.
Yes, you could use ready powdered sugar for the cake as well as for the caramel. But use the sugar by weight, not by volume. And sunflower oil would be more suitable for this recipe or any other cake recipe.

Good evening, Jocyleen. I think it's best not to keep it outside the fridge for more than 6 days as it is a moist kind of cake. After six days move the cake to the fridge where it will stay good for over a month. Hope you have a great week too.
Aruna, as a replacement for each egg, add 1/4 cup of whipped dahi / yogurt. Only see that it's not too sour and also make adjustments if necessary to get the final consistency of the batter right.
Veena am back again,was a little busy, I was taken up with the date and carrot cake and I want to make this, but grinding clove is going to be difficult, can I mix them with the other spices and grind it together, otherwise I will not get the fine powder that you got. Also can I use powdered sugar since I have it at home,if yes how much powdered sugar should I add. I have caramel color which I used to use for my christmas cake, can I use this, if so do I need to caramel sugar, these questions too many but would be happy to get your advice. I read your subsequent comment first. And also answered your query. Yes you could grind the cloves with the other spices. You could try making a syrup with powdered sugar, water, and the caramel colour, but that won't give you the flavour of the caramel syrup. You'll have a brown coloured plain sugar solution.

@@Larry-qf7lw , you're welcome. I pounded the four cloves using a pestle and mortar. It was very easy to do that. Please don't powder a larger amount of cloves than necessary. If you don't have a pestle and mortar, grind the cloves with 2 tbsp of sugar, taking this from the rest of the sugar needed in the recipe. Hope this helps.
Veena went through the video, I will need to make the caramel syrup which I will do, I think only let me know if I can use powdered sugar but if you feel granulated sugar is better, don't worry I will use it. I will not use the caramel color. YOur caramel sugar looks superb.
You'll have to use granulated sugar, Larry. But in case you want a way of getting out of preparing the caramel syrup, you could replace this with dark molasses, approximately half a cup. You might need a little more. Go by the consistency of the final batter which has to have a ribbon consistency. (I however prefer the flavour of caramel syrup.)
@@PataCake no Veena the caramel syrup that I have in my cakes when required it is just 2 tsps for the dark color. I prefer making the caramel syrup. It looks superb

My pleasure to be of help, Lalita. In this cake, you won't feel the taste of oil if you use any refined oil like sunflower oil, rice bran oil, etc. The oil keeps this tasty cake nice and moist. But if you feel you would rather add butter, just replace the oil with an equal quantity of butter. (Though I recommend you stick with using oil. In many chocolate cakes too, oil is used to make them moister.)

But depending on how thick or how watery your yogurt is, you might need to add a little less or a little more of water at the end while adjusting the consistency of the batter, if it's necessary to adjust it. Also, reduce the oil to 3/4 cup + 1 tbsp. Everything else will stay the same. Enjoy! And thanks for the appreciation.

Veena dear wanted to write last night about my experience with the cake. As I told you earlier I was lucky to use my weighing scale so the measurements went right. I had a problem making the caramel. I did exactly as you said and on low flame since am used to making the caramel for the christmas cake. I used a pan just like yours a thick stainless steel pan. The sugar melted and I was waiting for the color to change but instead all the water evaporated and became sugar again. I continued and at last the color changed. I waited for a while to get a dark color then I put 1/4 cup water and had to put it back on the fire to thicken it a bit. It was fine and instead of adding 2 tbs extra oil to the 1/2 cup I just went with 1/2 cup. The rest was the same. The cake is super delicious and moist as ever. Only the baking time in my oven took 1 hrs 15 mins but it is all ok and super delicious. Tku veena. You are a wonderful person. You were with me and answered all my Qs. Tku so much and God bless you

to avoid caramelization, you can add 1/4 tsp lemon juice to the sugar syrup. hope this helps.😀
@@pauljaya774. you're right. But even without the lemon juice, if you make the caramel correctly, there's no major problem with crystallization. Some people even add a little butter towards the end to make sure the sugar doesn't all crystallize again. If just a little sugar crystallizes along the walls of the vessel, there's no problem because when you add the water, this crystallized sugar from the sides dissolves into it.

I love any form of cake recipe though l am diabetic. I like this cake with dates & carrot. I will try this recipe with some modifications like only wheat flour. Use coconut sugar with low glycemic index for people like me. Instead of caramel just use insstant coffee powder.

For an eggless version, as a replacement for each egg, you have to add around a 1/4 cup (55-60g) of yogurt. Just see that the yogurt is not too sour. Also, adjust the consistency of the batter in the end. If it's too thin, add in some maida.

Veena do you tightly pack the cups. Looks like you have added 1/4 cup water to the caramel twice. Please confirm. The umpteen Qs are because am in the making.
In the beginning, you have to add only 2 tbsp of water to start the process of caramelization. After the sugar caramelizes to the colour you want, turn off the heat. And immediately but carefully stir in 1/4 cup warm water. .All this is mentioned in the video.

Veena can ready powdered sugar be used. I have coconut oil and sunflower oil can I use any of these oils
Yes, you could use ready powdered sugar for the cake as well as for the caramel. But use the sugar by weight, not by volume. And sunflower oil would be more suitable for this recipe or any other cake recipe.

Aruna, as a replacement for each egg, add 1/4 cup of whipped dahi / yogurt. Only see that it's not too sour and also make adjustments if necessary to get the final consistency of the batter right.
Veena am back again,was a little busy, I was taken up with the date and carrot cake and I want to make this, but grinding clove is going to be difficult, can I mix them with the other spices and grind it together, otherwise I will not get the fine powder that you got. Also can I use powdered sugar since I have it at home,if yes how much powdered sugar should I add. I have caramel color which I used to use for my christmas cake, can I use this, if so do I need to caramel sugar, these questions too many but would be happy to get your advice. I know you are prompt and reply for which I am very grateful, thank you Veena.
I read your subsequent comment first. And also answered your query. Yes you could grind the cloves with the other spices. You could try making a syrup with powdered sugar, water, and the caramel colour, but that won't give you the flavour of the caramel syrup. You'll have a brown coloured plain sugar solution.

@@Larry-qf7lw , you're welcome. I pounded the four cloves using a pestle and mortar. It was very easy to do that. Please don't powder a larger amount of cloves than necessary. If you don't have a pestle and mortar, grind the cloves with 2 tbsp of sugar, taking this from the rest of the sugar needed in the recipe. Hope this helps.

Veena went through the video, I will need to make the caramel syrup which I will do, I think only let me know if I can use powdered sugar but if you feel granulated sugar is better, don't worry I will use it. I will not use the caramel color. YOur caramel sugar looks superb.
You'll have to use granulated sugar, Larry. But in case you want a way of getting out of preparing the caramel syrup, you could replace this with dark molasses, approximately half a cup. You might need a little more. Go by the consistency of the final batter which has to have a ribbon consistency. (I however prefer the flavour of caramel syrup.)
@@PataCake no Veena the caramel syrup that I have in my cakes when required it is just 2 tsps for the dark color. I prefer making the caramel syrup. It looks superb

My pleasure to be of help, Lalita. In this cake, you won't feel the taste of oil if you use any refined oil like sunflower oil, rice bran oil, etc. The oil keeps this tasty cake nice and moist. But if you feel you would rather add butter, just replace the oil with an equal quantity of butter. (Though I recommend you stick with using oil. In many chocolate cakes too, oil is used to make them moister.)
