A sweet Jamaican grandmother made this and other breakfast items and served it to the parents of the children in the hospital every morning. I’ve been using this recipe for years! My mom used to make porridge for me as a kid and now she says I make porridge better than her! I did alter the recipe slightly though by adding a cinnamon stick before the water boils and then remove it when it starts boiling. I also start with 4 cups of water and use two cans of coconut milk. It makes it super rich and creamy. I highly recommend!

Man, what is this fascination we West Indians have with food that's burnt at the bottom of the pot ("bun pot", as we say in Barbados)? Lot's of folks here, especially the older ones, purposely burn rice, because they can't get enough of bun pot! lol

My Puerto Rican Grandmother used to make this. I woke up one morning with this on my mind and found this recipe. I followed exactly but didnt have condensed milk so I left it a little thick and added 2 tablespoons of butter and french vanilla coffee creamer. Came out great. Thanks for the video. I'll use condensed milk next time.

Tried this today. It came out excellent. Other recipes mix in the dry cornmeal with the boiling water, I find that mixing the cornmeal like this causes more lumps. It's better to mix the cornmeal with room temp water before adding to boiling water. Even letting it soak for a while give creamier results.
I'm giving you a "like" because I like your attitude. You know all porridge is good porridge, by many names...polenta.....fried mush.....hot water cornbread.....and it's all cheap. Feed that family with good food and cheap......this is good grandma food.....all should pay heed. Thank you miss "how to cook" :)
I must say, that I use to eat this as a child. It was called ( cornmeal mush ), and was the poor man’s version , and equivalent of “Cream of Wheat”. We either ate it with butter 🧈 cream, and sugar, or just salt 🧂 and pepper. Also we would allow it to solidify, slice it into squares and fry it as a part of breakfast. We used ( white ) corn meal for this recipe. However, we used ( yellow ) corn meal for cornbread, hoe cakes, pan fried bread, etc. This recipe has been a staple for many years among the days of old, and fed many a hungry person indeed.

we used to do the same in Zimbabwe, the hardened layer at the bottom of the pot tates like biscuits. I guess its a black thing from a long time ago.
