Ingredients for Cornmeal Porridge
3 cups coconut milk (or cow's milk, almond milk, or other nut milks)
2 cinnamon sticks (or cinnamon powder)
1 teaspoon nutmeg (preferably freshly grated)
1 cup fine yellow cornmeal (or other cornmeal)
1 cup water (to hydrate the cornmeal, plus additional water as needed)
Salt (a little sprinkle to taste)
Brown sugar (to sweeten lightly)
1 tablespoon vanilla extract
Sweetened condensed milk (optional, for additional sweetness and richness)
Powdered cinnamon (for garnish)
Ingredients for Toasted Coconut
Grated or shredded coconut
Salt (a bit, for seasoning)
2-3 pinches of sugar (for seasoning)

A fresh’ coconut in North America can be quite unpleasant. Chaokoh brand canned coconut milk is the best I’ve found, very creamy and good tasting, probably needs diluting for this recipe. Not quite as good as frozen coconut milk but that’s harder to find.
I have a lot of fun finding ingredients for your recipes- even here in Central California where we’re gifted with such a wonderful mix of ethnicities!

@@feedandteach Yes, but beware. The Thai Kitchen brand (most common brand in non-Oriental/Asian groceries) I had was awful. Gooed up with guar gum and its lye taste overpowered everything I tried to do with it.
Yeah. I have that problem with a lot of local brands too. Very little flavour, thickened with guar or xanthan gum and has additives to keep them white
