    For those who do not know this easy dish that all Algerians love, this is the story behind it. It is said that it was invented by the Spaniards during their occupation of the coasts of Oran (an Algerian city), and when the local resistance besieged them at the time, they could not find anything to eat, so they crushed the chickpeas they had and mixed it with some ingredients to get this dish. Which they called “Caliente”=hot (in spanish) and in Algeria we find people who call it karantika, garanitata, karan or الحامي/al-hami/=hot. Thank you for sharing our dishes w/ the world ❤🇩🇿.

    And for the egg you're supposed to add it into the food processor and not on top of it :))

      This is not an algerian recipe though, algeria is a recentely born/ created country.. This recipe is 100% moroccan, and it belongs to both the north and northeast of Morocco where it is known under the name of KARAN. All what algerians did is changing the name from Karan to Karantika.. This video is exactly like if he made a pizza and called his video Cooking algeria pizza, while the pizza is worldwide known that it belongs to Italy! ;)

    1. Mhajeb is simply the plural of mahjouba. So, don't worry about your previous vid.
    2. The only thing you've missed in your karentika/garantita is that little pinch of cumin on top of that chickpea pudding.
    3. Now, you have to try : chakhcoukha, couscous, zviti, doubara, dolma, rechta, berkoukes, hmiss, chorba/hrira, loubia, bouzelouf, lham hlou, bourek, hahaha !
    Anyway, glad to see you do appreciate this Algerian specialty...

    we call it karantika for those who lives in the west...and garantita for those who live in the middle ( the capital and all the cities around)...next time try to mix the egg with all the ingredients , also try to put it in a large plate and this will give you a perfect result , I mean a thinner layer which is very easy to eat 🤌 but really bravo 👏 you did well

    The thickness was great, and the black top is supposed to be there, it's a chickpea custard rather than a pie.
    It's the cheapest fast food option (cheaper than pizza!) ,so hearty, so delicious, suitable in winter and summer.
    We make it at home for a quick easy hearty lunch/dinner.
    It's supposed to be moshey and creamy while hot.
    It's served hot to warm.
    It's called karantika/karan in the west of Algeria, garantita in the capital region.

      That's a really good suggestion.
      Mthawem is unique, I don't think there is something similar elsewhere.
      It's ground meat +almond meal meatballs, cooked in a tomato-less garlicky sauce where the name is from.

    I love Your videos and Your interest for foreign cuisine. I'm from Germany and have never eaten this Algerian dish but it looks absolutely fantastic and I will try it for sure.
    Just while watching the video a dish from Tuscany in Italy came to my mind. It's called Torta di Ceci or Cecina and is a well loved streetfood there. It seems to be a close relative of the dish You were cooking. I've eaten it in Pisa and loved it very much.

    Hi ,I am Algerian and I can say that you did well , I have some advices for you if you will cook it again.
    You are not obligated de put it in the blender , in general we put all the ingredients and let it rest for an hour or more .
    In the ingredients you should put cumin in the Bigging as went you add salt or pepper ,and you add some more went it's cooked .
    It must be giggling lol.
    And it must be have a burned face 🤣😂 this is were all the good taste is.
    The egg you add it too in the begging of the recipe .
    It doesn't mind to call it karantika (ouest Algeria call it like that) or garantita (one the center of Algeria Calla it like that) .
    You can add some olive oil on the top went it's cooked .
    And we drink with it a soda.
    At the end thank you to represent one of our preferred dishes

    My husband is Algerian working nights. He usually makes it so i was looking for measurements. We mix 2 eggs in with everything just by hand.
    Yours looked really good. My husband would have loved the burnt part. :)

    karantika was born in the fort of santa cruse in Oran during an embago.. the Spanish were starving, they mixed chickpea flour and water and cooked it and voilà magic happened!

    my youth!!!i used to spend summer in Bab el Oued at my grand parent apartment, just close to the big closed market(now demolished).there was a street food corner when i run to every time i managed to squeeze a dinar out off either my uncles, ants or grand ma...the Karantita sandwich was just amazing, i could have eaten it everyday and i wouldn't have enough.

    Most karantika come with the burnt part that you took out. Also you can eat it without bread, or a light baguette the one that you uses look like whole baguette. Thanks for letting the world know about this dish. Best

    First of all thank you so much chef for cooking my favorite Algerian street food, and seconde of all, when cooking karantika you need to heat your oven to the maximum for at least 30 mn before you cook it, after you put it in the oven it shouldn't take more than 15 to 20 mn to be ready..(use a stainless steel baking dish for best result) it tastes better in a baguette sandwich with a lot of tunisien harisa and some cumin sprinkled on top 😋
    Btw, I really like your videos! Keep up the awesome work you're doing 👏

    If you want, you can add fries alongside grandtita in the sandwich; makes it a lot more better in my opinion. Some like to add both Harrisa and Mayonaise in the sandwich, as unhealthy as it is you can double the taste factor that way.

    I've two notes about preparing this dish ... The mixture should be dropped to bigger trays ..cause the pie must be less thicker..and we loved the black upper layer that's what we called it a success karantika dish .. and for the eggs each one have his own recipe it's not necessary to make it at the end ...and good job as usual 🇩🇿🇩🇿

    the recepie is quit different from the one i know lol🤣
    the karantika my version:
    2 eggs + 150ml vegetables oil +2tsp salt (wisk together)add 200ml milk + 400g cheapies flower (it should be thek mixture) finely add 1and half liter of water and bake it 200°C about 40min to one hour depending on your oven.

      what? that's quite weird, may be you are from the most southern parts of Algeria , that's the only region that I can think of were there is no Karantika or as we call around Algiers Garantita. let me know am quite curious.

      @@sammainman9464 hello Sam. My dad is berber (kabyle) and my mum is alsi berber but from south of the country originately. Butttt she grew up in Algier with most of my family from her side. And I was actually born there and left at 8 during the civil war... Although my family always tried to continue on traditions i have never seen that dish. So I cannot wait to try it myself. I will ask my mum if she knows and why she never cooked that. Take good care

    The karantika comes from the word in Spanish Calentita which means hot food
    It's a dish from west of Algeria exactly from Oran the city that had Spanish influence the beginning of the last century

    The chickpea flour you used is pronounced as "bay" (as in -a broad inlet of the sea where the land curves inwards) and "sun" (as in -the star around which the earth orbits) so it is "bay-sun".
    Also, the recipe was very cool .✌🏼
