I made some homemade vegetable soup and put the green top Dan - O’s in it and it was awesome it really had a good flavor. I love the seasoning

Your butter sauce: Too fatty for Atlantic salmon, boo(maybe wild salmon-but don’t go overboard for balance)…your butter sauce will def go great on halibut, sole, swordfish, tilapia…you want citrus sauces for fatty fish such as salmon, Chilean seabass, etc.
Chicken & meat should “rest” after coming off grill, oven, skillet, etc to allow it to “carry over” as it continues to cook…be sure to tent it with foil…this technique also allows the juices to redistribute…

I make my roux dark like yours for my gumbo. I am making your turkey and dumplings today. We had Thanksgiving in July, so I have lots of leftover turkey. Mmmm can't wait!

That's right to take your meat out to room temp before, so not to shock it, but straight from the fridge allows me to get a crust and still have med well center, it still cooks off the grill resting covered 20 min.

When I prep beef I wrap it in plastic wrap in fridge for up to 12 hrs, dry rub no acid . All wet goes on before cookin.

I never cut a tri tip that way…if ever confused where the grain is going taste a sample…if its tough then you are Not cutting Against the grain…
Most restaurants sous vide tri tips is the reason they come out so soft…
