A really golden moment just after 14:40 for my own 40/40 sharpening. Stu uses a strictly single direction of gouge rotation, starting from the wing towards the gouge tip. I'd picked up a two-directional movement that I just realized is the source of occasional over-rotation of the flute. I "know" better, but it's a lot harder to prevent over-rotation with the gouge already "in flight" against the wheel. Once this happens, it's a downwards spiral: you need to over-rotate the gouge again to fully sharpen the wing and maybe you go a little too far past that... and so on. Eventually the wing is trash and turning is a struggle, and it's time to blast the edge away and reset. It's been frustrating, but now I finally understand the root cause.
