Thank you so much for your bread videos. My bread machine was in the pile to go to the thrift store until I saw your videos. Now I'm making bread every other day for my family and they can't thank you enough 😊. Homemade bread is so much better than store brand bread. Thank you again for your great recipes and for the idea of only using the bread machine to mix the dough and do the first rise. I never liked those square breads that the bread machine bakes and taking it out of the bread machine to rise in a regular bread pan is a game changer.🎉

I have used the Hamilton Beach bread machine and it lasted me 20 years so I can highly recommend it. I swear by my bread machine. We have not bought bread in decades. I like to know what is in my food and as I get older it has become even more important to me. Your breads are lovely! Thanks for sharing.

Well, after saying last time I watched one of your videos on bread that I was going to make some. I’m definitely going to make some bread. I have my bread maker out and it’s next to my coffee machine (not in the kitchen) so no one can complain. As soon as I’ve been shopping later on this week I’ll be making some bread. I’m so over paying so much for a loaf of bread and if I don’t run out it goes stale really quickly. You’ve really inspired me to make bread so thank you Colleen. I’m only going to use the dough setting though.
Wow Colleen, I just bought a bread machine and my first attempt was terrible. I came across this video and adding the warm water and yeast in the first step is exactly the tip I needed. I made the italian loaf except I was out of italian seasoning so I used thyme. It turned out delicious! Thank you so very much!

Ive had a bread machine for years and decided to dig it out and use it again. Somehow I lost the cookbook that goes with it. So this is really helpful getting recipes from you. You explain things simply and easy to follow you.
I do a lot, as you do, variations on a theme using my bread machine dough setting. So far for this Christmas l have in my freezer English tea cake bread which is like your fruit bread.I bake them in a brioche pan and glaze them with icing sugar mixed with lemon and orange juice.Once the glaze has set and the breads are cool I flash freeze them and then wrap in cling wrap ready to offer as a gift etc. I have learned that you can make your basic dough,wrap it in a tight plastic bag and place it in the fridge for up to 48 hours before baking. Great to do on Christmas morning to make the house smell yummy and pass around after opening gifts.

Picked up a bread machine from an estate auction several months ago - with obvious good intentions.....did make some from the manufacturer's book, and was encouraged to branch out a bit from those when I found your channel. Still I hesitated. Today, however, I took the plunge and tried your Italian/French Bread to accompany our homemade chicken soup. If you could have seen my eyes when that loaf was done with the second rise, and then again when it came out of the oven - it was pretty comical! Sadly, the bread was not cooled enough to cut and enjoy with dinner, but it sure topped off the soup when it was!!! Thank you, you made this look as easy as it is, and made me look like a rock star at the same time! The bread will go great with the leftover soup, spaghetti, meatloaf, tuna salad sandwich, egg salad sandwich, Oh my!

I just made your “basic bread machine recipe” I left it in my machine to bake because it’s late in the day. I would like to try it your way next time. My machine creates a thick crust even though it’s on the ‘light selection. Maybe I’ll be happier with the bread in my pun bread pan in my oven. Thank you so much for trying to help us with recipes and videos to help with instructions. From your videos I thought you lived on a farm or ranch and had your gardens also. Glad to see that the average city person can be real good at the basics of homemaking. Lots of the older ladies are not cooking too much anymore and say they don’t want to make bread because they would eat too much. I’m so glad you have my attitude towards “home-making,”the healthy right way” that’s also less expensive 🤗😋🍞🥖
Hello Bonnie, I do think I am a pretty average person. I am 10 years older than my husband so was set to retire quite some time before him so we sold our house purchased a mobile home in a court and got rid of the mortgage. I use the dough setting on my breadmaker all the time while I a home. When overseas and dont have access to it or my Kenwood, I use the stretch and fold method. Bread flour is higher in protein and gives a lighter crumb.
Hi Colleen, I have been watching you for a few weeks and am loving your recipes. I really like how down to earth you are and appreciate that you use what you have on hand rather than buying special ingredients. I have made your pizza dough twice and it worked perfectly each time. I even baked on the Dollar Tree pizza pan. Yesterday I made a combination of your Italian and Garlic Breads in this video. I used the Garlic bread and filled it with butter and fresh garlic then added Italian seasoning to the butter mixture. I divided it into 2 loaves and shaped it in a long loaf on a parchment lined baking sheet. I only need to bake about 25 minutes. It was amazing! The butter filling made the bread so delicious. I recently purchased a gently used Bread Maker without the manual, so I downloaded it and I wanted to read it, but it hasn't happened yet. It's 76 pages long. I just thought about TH-cam to motivate me. I recently learned that you can add Wheat Gluten flour to All Purpose Flour creates Bread Flour. Hamilton Beach is a quality brand name.
I am going to try all three, they look delicious! Then get daring, and try the last two with apples and cinnamon sugar, to see how that works. About 30 years ago, we bought a very nice pull-apart-apple-loaf from Frankenmuth, Michigan, and could never find a similar recipe; until this Garlic Bread technique.
I actually only used my bread machine a couple times baking the bread and then went to the dough setting and haven't looked bavk. I hope your husband enjoys the videos. Cheers, Colleen

After 50 years of pouring salt out of the salt box a retired home economics teacher shared that she keeps salt… in a sealed container. I now have salt in a small plastic bowl with a sealed lid ready to grab for baking - so convenient

I have the same brand of bread machine and have had problems with the bread rising properly, I have noticed you place your yeast directly into the warm liquid, I am going to try this versus the directions on the recipe calling for putting yeast in at the end by making a well in the flour for the yeast. Love your videos!

Today, I am making homemade bread to go with goulash. Wish I had seen these recipes first. Any one of them would have been delicious! love the bread machine recipes have one for very long time and use it. i was out of bread and come here and there you are making wonderful bread , i never bake them in the oven , i will do this today thank you.
I did try the recipe for the basic bread. I didn’t let it rise enough, so it came out without rising too much. I will try it again. I’m not going to give up. I’ll watch your video while i check the dough on its rise out of the bread machine and look at the size of yours also. Thank you so much for helping us .

I just recently discovered your channel. Your recipes really hit home as far as remembering the appetizers from the 60's (I think we are the same age) and also the bread machine recipes. After 50 years of pouring salt out of the salt box a retired home economics teacher shared that she keeps salt… in a sealed container. I now have salt in a small plastic bowl with a sealed lid ready to grab for baking - so convenient

I have the same brand of bread machine and have had problems with the bread rising properly, I have noticed you place your yeast directly into the warm liquid, I am going to try this versus the directions on the recipe calling for putting yeast in at the end by making a well in the flour for the yeast. Love your videos!

Today, I am making homemade bread to go with goulash. Wish I had seen these recipes first. Any one of them would have been delicious! You caused me to go out and buy a bread maker, and the first thing i made was your cinnamon rolls. Thank you for the “ seat kick”. Got several of us baking bread again. love the bread machine recipes have one for very long time and use it. i was out of bread and come here and there you are making wonderful bread , i never bake them in the oven , i will do this today thank you.
I did try the recipe for the basic bread.
I didn’t let it rise enough, so it came out without rising too much. I will try it again. I’m not going to give up. I’ll watch your video while i check the dough on its rise out of the bread machine and look at the size of yours also.

I have the same bread machine. I also bought 1 from a friend that had a small cafe. They were moving and bought her bread machine. I have made wonderful Banana bread to give to neighbors. Made bread couple times. We don't eat that much bread.

I agree. I do not like the thick crust on all sides of my bread. I also use dough setting. Love your videos.
