Pro tip from Indian: add roasted cashew or just roast it with other whole spices while making sauce.
Always add garam masala at the end after adding chicken, that makes spices more powerful and prevent it from disappearing under cream and butter.

I ate at an authentic Indian restaurant for the first time in my life. I’m not joking when I say my mind was blown. It was the most delicious, lively, colorful and vibrant tastes layered, each spice level was a beautiful experience all combining to a beautiful symphony for my taste buds. I now know what having your mind blown feels like. I felt like crying because I had never experienced such a beautiful experience with food. Now I am hungry for more experiences with authentic cuisine from around the world to experience. I had not realized how starved for experience with different cultural foods I was and I’m so thankful my introduction was so special at that Indian restaurant. Not only was the food an amazing experience for my mouth, the staff was so kind, wonderful hosts and they were so intuitive. You barely had to ask for anything as they already anticipated your needs. It truly was a special memory and I am so thankful for it. I am hoping that I can try to bring some of that desire into action in my own kitchen in the mean time and hence the TH-cam search. I also have promised that I would raise my young children to be raised experiencing more foods from around the world so they don’t have to wait till their 38 to have the experiences for themselves. ❤

Next time I’ll marinate over night but I just marinated for about 4 hours. I found an Indian market close-ish to my house to get the Kashmiri chili powder and dried Fenugreek leaves and boyyy do they make the dish. The cardamom used here is called Big Cardamom or Black Cardamom when you shop. Regular cardamom is normally green cardamom. Black cardamom has a slightly different flavor profile than green. You can use both. Also, if you soak the cashew in hot water for 15 min, it will cut down the cooking time and will not burn the tomatoes. Makes it easier to manage for people new to Indian cooking.
Instead of Chicken, try with Panner for vegetarian version. And you can add tofu, vegan butter and oatly curd for vegan version. You may have to adjust the cooking time through trial and error.

While waiting for the cashews to get cooked, the tomato base may get reduced too much which may alter the taste. You can soak the cashews in water for about 20 minutes and then add it or after soaking make it into a fine paste, then add it to the mixture at the end so that u don't have to wait for the cashews to get softened + you'll get the smoothest sauce. 🤤🧡

Wow that's actually pretty authentic! The color, the consitency all look on point.
At home we would just use the whole chicken not a specific part. Also true for most restraunts. Some of the the more high end ones try to do this bone less style. That to me isn't really the traditional. It was afterall made from left overs..bones and all. Except for the canned tomatoes ofcourse. But I can completely beleive they turn out better since those tomaroes are usually canned at their prime. We just don't have that in Indian homes.
No matter how you do it though, it is a truly mind blowing dish. My memories of childhood are full of this dish in Dhabas across Punjab!

@@000euMJ Yes actually blending is part of the accepted process now. I definitely do it at home. Blending and straining through a seive to get an ultra smooth, silky, creamy texture. It basically takes out the tomato skins and any tough fibres from the onions.

For over 30 years I've been trying to find a Butter Chicken at various places, but none compared to the most delicious one I had in a small shopping mall... until now! I just made this tonight... WOW it brought me back to that little place 30 years ago.
This recipe is the ABSOLUTE BEST 👌 👍 😍
Instead of waiting so long for the cashews to cook, I blitzed them in the processor, saved a lot of time, and she is right, they make a difference.
I made double portion of the sauce to freeze for five or six meals ... I also marinated the chicken and froze that as well, so we can have it when I don't feel like cooking, just boil rice, 10 minutes to cook the chicken and sauce and you've got a high restaurant meal (I know it's better than restaurant quality 😊).
    Yep, can't recommend it enough.
I hope you perserve and make this, you won't be disappointed !

I made this today. It’s sooo good. I used my immersion blender to blend it right in the pot. Don’t skip the Garam Masala part it’s so integral to the taste of the dish. I live in Toronto one block from little India so finding all the whole spices was easy for me & cheaper since Indians shop there all the time. Now I’m stocked up for next time. I added more Kashmiri powder & more fenugreek leaves. My sauce thickened fast so I used 1/2 cup of chicken stock to even it out. Then it tighten again when I added a little more butter and cream.

So I made this, and it was really good, just like from our favortite Indian place! Just a few notes here:
    - It was really spicy, even for someone who likes that, so I would be careful with the chili. But maybe it was the amount of spices in general, because...
    - Ignore the garam masala advice, I doubled the amount, like they said in the video, because I used store bought and I had to wash the chicken after marinating (after I cooked it of course, I didn't try raw chicken lol), because it was was to bitter. For the sauce I used the normal amount, because I knew better by then and it was the perfect amount for me. So if it's your first time, use the normal amount, and see for yourself, if your garam masala is strong enough and maybe add a little afterwards
    - soak the cashews in water for a while before putting them in, I did that for 20 min and it STILL NEEDED 15 minutes until they where soft in the tomato mixture. Without the soaking it would have taken much longer and I would have probably lost a good amount of the tomato sauce
    - It was exactly my taste, but it was on the sweeter side. So if you're not a fan of the sweetness, put less sugar in in and try, before adding more.
-and last but not least: for my european pals, I made the chicken with the upper grill function (the one with the little triangles) in my oven and it was 250°, took 10 min until it was done and I turned it once.
    Thanks for the recipe! 😇

Although as an Indian I'd suggest adding green cardamom pods into to the spice mix and as well as in the gravy and rather than adding the cashews after the tomatos, add them before or along with the onions because slight roasting them gives the dish a different dimension.
Also add the garam masala in the end before blending, that makes the gravy more aromatic and more vibrant in color.

WOW just made this yesterday & it came out excellent my parents loved it! I used store-bought seasonings rather than fresh seasonings. Next time I will use fresh seasonings to see the difference however with store bought seasoned it is good but like the video says double up on it! I did exactly what the video said for everything and you want to make sure that the cashews do get soft!! That is the key . Other than that I would advise if you are making this for a lot of people use a lot of chicken because some of the chicken shrinks , as well as use a lot of tomato sauce I used two really small cans because that is all I had but I would probably recommend using a 30 ounce tomato sauce can that should do you good enough but definitely the more chicken the better! PS she wasn’t lying when she said your kitchen will smell amazing lol

As a puerto rican...I have to say this is one of my favorite dishes and now thanks to TH-cam I know how to make it. There's something so wonderful about a kitchen that smells like basmati rice and garam masala. So much flavor and comfort in a single pot. The only thing I forgot to add was the cashews. Next time for sure ❤

I love this format where Kanchan tried various alternative ingredients and tells you the pros and cons. She understood those looking at TH-cam for recipes are up for trying things. So what if this is not most authentic, it is the creamiest. She should do this more! Btw I tried this recipe and love it! For those who says their grandma's butter chicken is better, make a TH-cam video else your comment is useless.

While making this either pre-roast the cashews or add them in the beginning to the oil to add more flavor. Trust me it'll a noticable difference. Also you soak the cashews (plain or roasted) in boiling for a little while to soften them to cut down on the cooking, just reincorporate the soaking water later cause that'll also have flavor. And as tip you can you honey instead of sugar to sweeten the Gravy, while adding some floral notes in the background. The honey will also break down the chicken a little more, making super tender.

Of course I reached out to check on her and she asked me if I was getting my butter chicken fix, she gave me her recipe, I changed a few things to taste (I like a lot of garam masala) now I can make it myself and I love it - made it for a date and he was shocked that it tasted so great, I took the compliment because he is Indian too.
