    Scallops takes center stage in this old boy's Seafood Hall of Fame. In my neck o' the wood it's hard to find ones of decent quality, especially in the restaurants.

    Made this today. Used small scallops and cooked them for 30 sec each side. After making the sauce I threw in zucchini noodles to be keto and allowed them to soak up the sauce. I added the scallops back in for a few second heat up. So delish.

    If you soak your scallops in water first you can get rid of some of the sodium tripolyphosphate which is put into scallops to retain moisture. The less moisture the better the seer.. I bet you knew that already though as you produce Top notch food !!

    They are great Ry, but I couldn't not get a char on them. The scallops released a lot of water and I think they steamed more than cooked. I pulled them before they over cooked and they tasted great, especially with the sauce.

    I cut mine into 4's just so they last longer.... Have you ever ate Pacific geoduck “gooey-duck”? I have a friend that lives in Sonoma and he loves them. This guy will eat any and everything so I thought I would ask someone with a little more refined palate. Thanks

      I think the recommended internal is around 145 but to me they seem dry at that point.

    Hi Ry, I’ve heard you shouldn’t pepper your scallops until after they cook because the pepper will burn, any truth to that?
