I love my Instapot Max for canning. I do find when it's set on my counter, if I reach up to a top cupboard, I hit the front button , it beeps and messes up the canning sequence. Have Hou done this? Now I turn it sideways so I can't do that.
Just found your channel. Seriously low amount of info out there on instantpot max canning, so I’m happy to see someone making videos on this. I just opened my max yesterday. I’ve started with meats because I’m having a freezer overload and need to clear out space. Do you always keep the keep warm setting on? Mine was left on yesterday but today’s test I turned it off. Another question, have you ever seen the temp fall below 240 after the timer starts? This happened to me today, at about 4 minutes after my timer started, the temp dipped to 237. Wasn’t sure if that was ok or not so I restarted as it was only 4 minutes into a 75 minute process. The second time the timer started it never dipped below 240. It was raw packed beef chunks and I wonder if that had anything to do with it as they were cool going in the first time but definitely hot when I restarted the process.
The video seems to skip a couple of steps such as starting with the vent closed instant Pot. And. why are the jars shown at the end without the screwy top. Also she doesn't mention how to deal with one piece metal screws top that you normally immerse in the water. Otherwise, fairly helpful.

I had heard that it is not safe to can in an Instant Pot. How can we be sure that it is safe?

No warm setting is totaly fine. That is wierd about the pressure dropping, do you think the setting may of been on low instead of max?
I have never seen mine do that once processing begins, always between 245-249 or 250. Maybe it was during the ten minute steam release prior?
