The Best Peanut Butter Cookies

  • This recipe began as a cookbook recipe, over the years, I have been tweeting it. Now when someone tries these for the first time, they say that they are "the best peanut butter cookie that I've ever tasted!" 😁
    The recipe is below ⬇️
    The Best Peanut Butter Cookies
    Yield: 48 cookies
    Preheat oven to 350℉
    Prep cookie sheets with parchment paper, or silicone mats.
    In a large bowl, mix together then set aside:
    2 ½ cups all purpose flour
    1/2 teaspoon baking soda
    1/2 teaspoon baking powder
    1/2 teaspoon salt
    In the bowl of a stand mixer, with the paddle attachment.
    2 sticks of unsalted butter, softened (16 tablespoons)
    1 cup granulated sugar
    1 cup of packed brown sugar (either light, or dark brown sugar)
    1 cup peanut butter
    2 large eggs
    2 teaspoons vanilla extract
    1 cup roasted, salted peanuts (if using smooth peanut butter, use 1½ cups of peanuts)
    Cream the butter on high speed until light in color and fluffy, about 3 minutes. Scrape the bowl and add both granulated and brown sugars. Beat on high speed for another 3-4 minutes. Scrape the bowl and add the peanut butter and nuts. Beat on medium speed until the ingredients are blended together, about 30 seconds. Add the eggs one at a time on medium speed, then add vanilla. Remove bowl from mixer and mix by hand to make sure the ingredients are well blended.
    Using a 1 tablespoon measure, or scoop, place dough on the prepared cookie sheets. Using a fork, make a cross hatch on each cookie. To keep the design crisp in appearance, keep the fork wet by dipping it into a small bowl of water.
    Bake 10 to 14 minutes, rotating pans halfway through baking. Allow the freshly baked, tender cookies to remain on the sheet pan for about 3 minutes before removing to a cooling rack.

    I enjoy your cooking. Have used many. These cookies look great. Would you please consider doing New England clam chowder? We live in Texas. It is difficult to find really great chowder. Also what clams can I use as we are land locked.

      As far as which clams to use, first thing that I would do is go to Costco. Ask the people in the meat department when they get their seafood shipments. If you don't live near a Costco, or Sam's Club, as a last resort, you can try using canned supermarket clams and bottled juice. It won't be the same, but it's better than nothing.
