  • Lemon curd is something that can be as a filling between layers of cake, used to fill a cupcake, as a filling for doughnuts, cream puffs and so much more. The recipe below will yield enough to fill a 9 inch pie shell. For tips, please watch the video.
    Lemon Curd
    Adding the zest is optional, if you choose to use it, zest 1 lemon before cutting and juicing.
    In a medium saucepan, whisk together:
    1- 1/2 cups granulated sugar
    6 tablespoons cornstarch
    1/4 teaspoon kosher salt
    Turn heat to medium and quickly whisk the next 3 ingredients into the sugar mixture:
    1 cup of freshly squeezed lemon juice
    1/2 cup water or whole milk
    6 egg yolks
    When this mixture begins to heat and bubble, add:
    3 tablespoons of butter cut into 3 pieces
    1-1/2 cups of hot water, whole milk, or a mixture of the two.
    Stir slowly until mixture thickens, about 5 minutes. Then stir for about 30 seconds longer. Remove from the heat and pour into a medium mesh sieve placed over a heat proof bowl. Use a spatula to push curd through the sieve. If using, stir lemon zest into the filling. Cover the surface of the filling with parchment or plastic wrap. Refrigerate to thicken and cool.

    You know I was just thinking of that tasty Apple Dapple cake, and wondering if you remember another old time recipe, spiced peaches.
    I used to make for my Grandma and great Aunt.

      I love spiced peaches, but I have never made them. My Grandmother made them with my Aunt, they would can them.
      As I recall, they would cut slices of peach into a bowl and add sugar (I would use brown sugar for a deeper, sweet flavor), cinnamon and a pinch of whole clove and allspice. I think that was it. They never measured it, but because you bake, you understand ratios so you'll do fine. Then they would can them (I'm a freezer gal myself).
      I know that you are in NOLA. I hope that you are doing well since Ida went through. What a mess!!
